This beer is an American adaptation to the classic Belgian style of beer known as a Tripel. Historically Tripels were brewed to have a very light golden color, a moderate hop presence, and be around 9% alcohol. But we are not in Belgium, so I decided to crank up the hops, dry hop the beer with American Amarillo hops, and brew it to 10% ABV. This is our American Tripel, enjoy.
Sensory Profile:
Enjoy in a goblet or wine glass.
Tropical fruit and honey are the two biggest aromas coming from this lively brew. While the hop bitterness is not as powerful as an IPA, the hop flavor melds nicely with the fruity flavors created by the imported Belgian yeast strain used.
Food Pairing: This beer goes great with roasted vegetables, fish and rotisserie chicken. And it can be used as a aperitif before dinner with shrimp cocktail.

Pours deep gold into a snifter. Bright white head with medium retention recedes to skim surface leaving random sheets. Honey and bread aromas. Spritzy with upfront honey with a hint of alcohol soaked golden raisins. Dry lasting yeast finish.

A tall, white head of meringue floats above the clear light golden body below. Honey, and a perfumy, yet earthy aroma come to the nose easily. The flavor is crisp, sweet balanced with fruity tartness and just a touch of dryness that comes in at the finish. Nice change.

Sampled from the bottle at the 2010 February Circle City Tasting. Poured a cloudy pale gold with a medium white head. Aroma had notes of sweet grain, yeast, banana and a bit of clove and honey. Flavor had notes of sweet grain with underlying hops and a bit of clove and honey.

Bottle courtesy of Lithy via Butters on 01/09/2010. Fairly clear golden body with a medium creamy off-white head. Sweet honey, toasted malt and caramel aroma. Sweet toasty malt, honey, light caramel flavor with a bit of floral hops. Medium full body with moderately low carbonation.

Bottle, kindly shared by fellow homebrewer Even. ABV not mentioned on the label. Deep golden colour, big to moderate head. Pleasant aroma of fruity American hops. Fruity flavour with notes of Belgian yeast and American hops. Quite good.

Bottle courtesy of Greg at Birreria Paradiso - thanks Greg! Hazy orange color with a medium white head and nice lacing. Aroma of hops, licorice and white pepper. Similar flavors, with good malt profile and light spice. Interesting.

Grabbed a bottle from the brewery today. Pours hazy yellow with huge foamy head. Tastes of banana, citurs, yeast, with good carbonation. Going to enjoy while watching the movie Thirst (a vampire movie the pun is unintentional)
