OLD ALE + OAK-AGED FOR 90 DAYS + WILD YEAST
This is the beer that started the brewery, a Wild beer, an untamed beast that thrives on the unpredictability of wild yeast and the subtlety and complexity of maturation in oak.

Bouteille 33cl, shared with the SHAPE crew, thanks Mark.

Tap @ In De Wildeman, sample size, courtesy of Simon, thanks! Dark brown color, hazy. Off white head. Aroma’s: sour, vinegar. Retronasal it’s sour but also somewhat sweet, like a true Flemish red/brown ale. Moderate sour and moderate sweet flavor. Medium bodied. Rather dry finish, with no new flavors. Quite nice.

Bottle shared at home. Hazy dark reddish brown with small beige head. Lots of overripe red fruit, milk, spices, some red wine, raw leaf vegetables, raspberry, dry tannins and wood. Starts light sweet with a tart touch that goes into a more present sourness with woody and herbal bitter finish. Quite complex, more in a Flemish red style.

Draft at 3 Dorstige Herten. Dark pour. Aroma of sour oak, milk and red fruit. Taste is very rich, with lacto sour, oak, mild vanilla, red fruit tannine and a vinous finish. Very good.

Tap @ dorstige herten, medium sample. Hazy brown color, short head. Aroma is quite funky, leather, bit coffee, bit red fruit. Bit bitter, medium sour, some coffee and roast, leather. I dont really like the leathery notes in combination with a darker beer with coffee notes. Not my thing.

Many thanks to Rian for sharing! Malty fresh beer. Hints of sweetness, not too deep. Sourness fresh but not too intense. Sour fresh aftertaste. Malty-fruity-smooth sour. Nice.
