Our IPA-mad brewers usually let hops shine by using a shy, retiring, neutral strain of yeast. But, coming off the back of some tasty saisons brewed over summer, we decided it was time to give our little yeasty friends equal billing.

Here we've used a fruity, spicy witbier yeast with a decent dose of Simcoe, Ella and Amarillo hops. Hoppy witbier or a White IPA? You can call our bluff.

Brewed exclusively with and for Ritchies IGA, Victoria.

Appearance: Straw gold with a noticeable haze.
Aroma: Characteristic witbier phenolic esters complimented with floral and citrus hop notes.
Flavour: Medium bodied with a dry finish and moderate bitterness.

Malts: Pilsner, torrefied Wheat, Caramalt and flaked barley.

Hops: Simcoe, Ella and Amarillo.

Yeast: Wyeast Witbier.

640ml bottle into glass. Bought at IGA Inverell, NSW. Cloudy pale amber beer with thin white head. Nose of sweet malt and a little spice. Taste is bitter, finish is lingering, herbal, and dry. Late on there is some background malt and bitter lemon. Interesting combination of witbier and IPA. Becomes sweeter as it warms.

Bottle. Unclear amber with a dense white head. 3+ Mild aroma of bubblegum, coriander, pepper, bread. A little citrus, but much more wit than IPA. But there's sharper citrus - grapefruit - and rather more bitterness in the taste. Finish is nicely dry and fairly bitter.
