Wanting something a little bit hoppier than the quintessential Australian or English Pale Ale styles, but not wanting to have the full on hop-splosion of an India Pale Ale, we settled on trying to create a classic American-style pale ale that was balanced and sessionable.

We use a Burston Pale malt base (with a little bit of Crystal malt thrown in for good measure), to which we add Magnum, Perle and Cascade Hops. We round off the process with a final dry-hopping of Cascade hops, for a last little burst of bitterness.

Bottle. Slightly hazy pale amber with a modest off-white head. Lots of grapefruit in the aroma, some bread and caramel. Light bodied, lowish carbonation. Tastes along the same lines as the aroma, some pepper at the end. Firm bitterness. Solid beer.

Pours amber with a small head.Nose shows sweet crystal malt, bready notes, grapefruit and floral hops.Flavours are half English pale, half APA. Rich malt with a fair bit of bready notes and some floral hops.
