Lambics produced at Cantillon Brewery are referred to as “young” after one year of ageing and are considered as fully matured after three years. Young beers contain the natural sugars that are necessary for secondary fermentation in the bottle while beers that have matured for three years contribute their taste and refined flavours.
Gueuze is the ultimate result of a complex blend of lambics of different ages and with different tastes kept in oak barrels. The brewer’s main task involves tasting and he or she will have to try around a dozen lambics from different barrels, finally selecting five or six. It is by this method that gueuze 100% lambic, presenting the typical characteristics of Cantillon Brewery’s beers, is produced. Each blended batch yields a slightly different gueuze because the natural elements at the heart of the beer make it impossible to produce a standardised product.
Bottles are positioned horizontally in a cellar and left to rest for an average of one year, this being the time required for the conversion of the sugars into carbon dioxide (secondary fermentation in the bottle). Saturation of the liquid takes place slowly and naturally, and when the lambic turns into a foaming beer it is called gueuze.

Pours light orange, quite hazy, a bit translucent through light. More head than expected, about one finger, but it disappears fast, leaving just the slightest hint of lacing. Aroma shows a good balance of all classic lambic components, among the lightest cerealy, slightly dough-like base: citric sourness, with tangerine and lemonish notes, maybe a hint of apricot, delicate lactic sourness, a hint of acetic, quite vivid funky notes with barnyard in evidence and lighter salami peel. Taste notes follow the aroma: there's good balance between all components, good definition (but still with a touch of rustic), decent to good taste intensity. Average sourness per style; feels a little more delicate than most of it's counterparts, with a soft lactic presence and a nice hint of sweet almond in a dry enough finish/aftertaste. Light to medium bodied, very delicate but decently lively carbonation; feels pleasantly oily and very easy to drink. I was slightly disappointed by some of their fruited lambics, but this one definitely matched the expectations: felt like drinking the quintessential gueuze.

[2024] On tap at Birreria Volo. Pours clear light gold white head. Aroma has a lot of barnyard funk. Flavour also has a lot of funky barnyard flavours. Fantastic beer.

On tap at Moeder Lambic Fontainas. Almost clear golden with white head. Funk, some wood, citrus, some white wine. Not that complex, but still nice.

Bottle, 750 ml at Cantillon. Incredible aroma. Loads of funk, cellar, some citrus, nice almost intensive sourness. Tad short in finish, but still pretty great overall.

0,375l bottle at Nicos place. yellow clear color, small white head. smells funky, grassy, peppery, curry, very nice one. full body, soft carbonation. tastes wood, curry, peppery, earthy, herbal. finishes lightly dry and lightly sour with notes of curry, peppery and earthy notes
