Rebellion was created by Bear Republic’s brewers as a single hop pale ale to showcase the characteristics of new hop varietals and old favorites. Always brewed with the same American and English malts, the soft malt character allows the unique flavor and aroma of the hop to shine.

On tap at Beer Republic during SF Beer Week, what a week! Pours clear deep gold with near white head and spotty lacing. The aroma delivers some floral hop notes and then running quickly into spicy hops and then more mildly malt sweetened spicy hops. The taste starts with crisp clean spicy hops and then flows into growing levels of spicy black licorice or anise notes but this anise like note never gets too forward. Another nice crisp brew on tap here and it seems a single hop with Mt. Rainer can work out nicely.

Tap. Hazy dark gold with an off-white head that lasts. Very faint aroma with spices and lemon pudding. The almost absent aroma’s more surprising after it turns out to be fairly rambunctious with white pepper, licorice, lemon and grapefruit crashing through light biscuit towards a pretty bitter finish.
