We chose only French oak for our first barrel aged saison for it’s distinctive yet delicate spiciness which compliments and enhances this style of beer. The beer rested in the barriques for six months prior to blending and bottling.
It pours beautifully into a stemmed glass to give a striking golden, deep straw brightness and an opaque white creamy head.
The aroma is pleasantly oak driven with soft notes of coconut and mint perfectly complementing the base saison’s spicy, yeasty and fruity aromatics.
The French barriques offer soft vanillin oak undertones that complements the spicy flavours of this beer. This first blend also highlights the elegant mineral flinty notes from the chardonnay wine previously held in the barrels to allow it a clean, dry and zesty finish.
Our Barrel Aged Saison is undoubtedly intricate, sophisticated and unashamedly shows no trace of sour or funkiness. It is a fascinating celebration of the way time in wood has influenced the saison to create a beer with finesse, depth and length.
This limited release beer can be enjoyed now or placed in your cellar to drink later.

Bottle. Deep gold with a white head. Aroma is funky and spicy with bracken and oak, lime, pineapple, lemon myrtle, cinnamon. Quite full bodied with coconut fattening up the palate (but also seeming a bit out of place). Sweet with a baked fruit note I didn't like underneath the nice citrus, wood and (too) prominent spices. Complicated and interesting but in the end not entirely convincing.
