Tough Cookie is a collab with Maison Dandoy, a Brussels delicatessen since 1829. As we value circular economy very much, we used, for this collab, their broken speculoos cookies for the beer. And they then used our spent grain to make a new speculoos cookie.

This stout has a biscuity malt base full of body, a low bitterness, spicy touch from the speculoos & creamy mouthfeel. A great beer for this fall weather.

Pastry stout dedicated to a 'biscuiterie' in Brussels, containing lactose and Christmas pudding spicing - so a very wintery offering from BBP. At Huzaar. Medium thick, irregularly edged, pale yellowish beige, stable head, jet black robe. Aroma of chestnut liqueur, hazelnut grounds, nutmeg and indeed 'speculoos', clove, cookie dough, milk powder, Christmas pudding for sure, caramel, bitter 'fondant' chocolate, cinnamon, liquorice. Sweet onset, not sticky though and quite clean with impressions of old raisins and dried figs, medium carbonated; light sourish undertone matching with sweeter, rounded, creamy lactose, hovering over a caramelly, dark-chocolatey middle, a bit toffeeish and syrupy, in the end well-spiced with clove, cinnamon and ginger accents, but also nutmeg. Light bitter-toasty and hoppy notes in the finish as well as some warming, gin-like alcohol; the 'speculoos' and Christmas pudding effects prevail, in a bittersweet, ethereally spicy way. Draws inspiration from both actual pastry stout (lactose, roasted grains) and Belgian Christmas 'Scotch' (spices), but the emphasis even seems to lie more on the latter than on the first; not really my thing, but interesting and solid enough.

Dark brown pour with with a creamy, white/beige head. Aroma and tastes of cocoa/chocolate, speculoos, and malt/white bread. Probably a good thing that the speculoos is not too strong as this would be a sign of artifical flavouring.

Bottle thanks to markoijelena - cheers! Aroma is sweet and sugary with sour milk. Opaque cola brown. Creamy bubbly beige head. Medium bitter and spiced with a sharp sour berry streak. Underlying creamy sweetness. More ginger root than gingerbread. Light-medium bodied. A touch of creaminess to the mouthfeel. Average prickly carbonation. Long astringent finish. My second spiced dark beer of the night. This one at least doesn't contain mushed veg.

Draft @ BBP Taproom.

33cl bottle from the brewery. F: big, tanned, quick gone. C: dark, opaque. A: a lot of coffee, chocolate, cocoa, bit lactic, dark dried fruits, dark caramel, toffee. T: medium malty base, chocolate, coffee, cocoa, bit dark fruits, toffee touch, bit more watery mouthfeel than I expected, weak bitterness, medium carbonation, nice, enjoyed.
