Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this dark Farmstead® ale is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Edith.

At Hopishop 2016. Aroma of tart, brett and red fruit. Taste has soft yeast, mild funk and some fruit. Bit boring, just solid.

Draught @ [ Hill Farmsted Tape Take Over ] - Warpigs Brewpub, Flaesketorvet 24, DK-1711 Copenhagen, Denmark. [ As Hill Farmstead Edith ].Clear dark red brown color with a small to average, frothy, good to fair lacing, mostly lasting to diminishing, off-white head. Aroma is moderate malty, roasted, burnt, dark malt, wood, tart, light brett - funky. Flavor is moderate sweet and acidic with a average to long duration, tart, wood, dark malt, dry, brett - funk. Body is medium, texture is oily to watery, carbonation is soft. [20160512]

750mL bottled November 2014, drunk 6/3/16 with Nelson.
Dark mahogany with some milk chocolate hues and a strong clarity. Light beige head atop is small and shows moderate to moderately strong retention.
Hazelnut, milk chocolate, prune and berry notes and a touch of honey-vanilla show a nice interplay of base malt, dark malt and light souring agents. It smells quite similar to CD16, though much less bacterial/woody, obviously. It’s very mellow and there’s no heavy roastiness to it that often ruins this "style". No alcohol or flaw, plenty of charm to the house character with good minerality.
Honey and chocolate show a nice marriage of roasted barley and pale malt with little/no roast character and only a lovely chocolate character remaining that mixes with the mild lactic notes to produce a milk chocolate flavor. Very light bread adds some structure and there’s more of the tartness found in their farmhouse ales that perfectly balances the sweetness. Soft, creamy texture with tight carbonation and no alcohol or flaw. I swear if you closed your eyes and tasted this blind, you almost wouldn’t guess it was terribly dark. Which is great because I usually find too much overbearing dark malt/barley character in dark saisons, which interrupts the delicate nature of the beer. Not here. One of the best, if not the best, in style.

Draft @ Warpigs Brewpub, Copenhagen. Pours a dark brown color with a small off-white head. Has a fruity sour spicy yeasty caramel aroma. Fruity malty spicy yeasty bretty flavor with weak hints of caramel. Has a fruity malty spicy yeasty bretty caramel finish.

Pours dark reddish brown with a tan head. Aroma has notes of malt, caramel, funk, tartness, berries, vinous, hint of soya and vinegar. Taste is medium sweet, light sour and light bitter with a long funky, fruity, caramel and berry finish. Body is full, texture is oily, carbonation is soft

Tap @ Warpugs. Very dark brown with tiny off-white head. Aroma is malt, chocolate, dusty, yeast, oak and sour fruit. Flavour is roasted malt, yeast, chocolate, dusty, sour fruit, oak, vinegar, dry, wood and sour.

From tap at Warpigs, Copenhagen. Dark brown hazy color with beige head. Malty and yeasty aroma, roasted malty, wood, vinous, light funky, some fruity and spicy notes. Sweet and acidic taste like aroma. Medium oily body with soft carbonation.

On tap at WarPigs Brewpub, Hill Farmstead Day.. Low tan-coloured head, spotty lacing to the glassware, near-clear, dark ruby body colour. Attractive black berries and dark malts on the nose. Oak and dark malty sweetness to the flavour character offset by mid-tart black berries and a backdrop of yeasty fruitiness. Tart and sweet ending. Fine bodied. Interesting and enjoying (shared with KimJohansen and Skinnyviking, Copenhagen 12.05.2016).

Sample@Hill Farmstead Day, Warpigs, Copenhagen (12/05/2016) - pours dark brown with a reddish hue. Aroma and taste is a mix of malts, sour dark fruit, some caramel sweetness, cocoa, brett, light vinegar, some spices, acidic tart finish.

On tap at Warpigs, pre-CBC. Very dark ruby. Tart smell, balsamic vinegar and fruits. Tastes sour and bitter-sweet, with notes of grapes, gooseberries, brewed coffee.
