Inspiration, from our 2005 harvest, expresses our thirst for refinement and whets the appetite of the imagination. This golden liquid has hints of roasted hazel nut. It will delight all your senses. Clear amber, looks "thick", though that’s tough to define.
Raspberries, apples, cherries and all sorts of boisterous fruitiness in the nose is complemented by rich vanilla, light toffee, a touch of pepper. It’s rich and beautiful, with a poignant acidity that you can sense from the nose. No alcohol.
The flavor shows intense red apple character, with allspice, cinnamon and white pepper. Lots of red fruit, sweet, rich toffee and vanilla. A bit of a premature ending, with some light oxidation, though it’s not the oxidation you’re familiar with from beer. More a dry, bready, slight thinning character. A bit of wateriness and minerality on the end with lots of acidity and apple skin. Nonetheless, it’s nitpicking one of the best ice cider producers around and this is fine, unbelievably drinkable cider, especially given its size.

375 ml bottle shared by AdamChandler, much thanks. Almost a brown Amber color. Aroma is awesome fresh pressed apples, oak and just a touch of caramel like nuance.
The flavor shows a mild oak character with beautiful pressed apples. Traces of brown sugar or caramel Maybe the alcohol is nearly completely hidden. Just a touch of sweetness to almost balance the sweet Apple. Wow! Crazy good.

Really pretty with a very burnt reddish orange color. This mead just smells insane. cinnamon cookies, apple, a little cherry pie. Insane. Cinnamon for days and days. Baked apple, sugar, brown sugar, maple, this is like the best dessert ever in a glass. the sticky oily nature of this lasts for days. Amazing. possibly the best cider ever made.

The cider is a medium to deep amber. Good clarity. Flat. The aroma has a full apple flavor. Caramel and juicy fruitiness. A bit woody. Vanilla. A little bit of spice, like a mild cinnamon. Big, full, complex sweetness in the taste. Caramel, brown sugar. Deep, rich sweetness. Very interesting. Full mouthfeel. Mild bitterness. Some woodsy edge to it. It’s sorta sticky but the flavors work with it well.

Poured from a bottle courtesy of ygtbsm94. Aroma has a rich apple note with some light caramelization. Apple character has a light overripe note to it. Lots of red apple skins and a hint of alcohol. Pours a slightly hazy copper color with no carbonation. No lacing and long legs. Flavor is very sweet with a ton of apple character. Some medium spiced apple notes. Nice caramelization with light red apple skin character. Light green apple notes. A bit overripe. Mouthfeel is full bodied with no carbonation. Low astringency and moderate alcohol warmth. Overall, a very nice cider. Great complexity with some spice, green and red apple meat and tannins from the skin. A light caramelization and overripe fruit note.

Dark amber color. Infinite fruitiness permeates the aroma. Very sweet, yet agile, sour to the right level, astringent in the final.

Bottle - Dark rich caramel, almost light charred barrel and over ripe apple. Clear copper. Caramel apple and hints of toasted wood. Very little if any acidity or tartness, just a warm wonderful sweet viscous liquid. Very enjoyable.

375mL bottle, pours a hazy dark amber orange with a few white bubbles as head. Aroma is complex as hell, with loads of caramelized apples and medium sweetness. Flavour is complex, with loads of rich caramelized apples, toffee, and medium sweetness. Elegant, sweet and complex - an ice cider of the usual luxuriousness of Le Face Cachee de la Pomme. Amazing.

2005 edition shared graciously at the Pittsburgh tasting 2009 from sir Mr Chopin, thanks Kev! Parafin and purfumy apple cider aroma. Plain old yellow and clear. Sweet and yummy yet nothing artificial about these flavors. Hides any alky content rather well. Very nifty aged or almost rotten apple taste in a tremendously good way. Very friendly and easy going. No carbonation. Lovely and delicious. Wow, glad to have had the chance at this one. Alky is certainly in there but so what. Finish is apply rich sweet candy. A little viscous on the palate. Very nice and enjoyable overall experience. THIS STUFF ROCKS.
