Sour wit ale brewed with spices and aged in an oak foeder
Tart -- Witty -- Collaboration
This tart, witty release kicks off our Foeders with Friends collaboration series. Our good friends at Jester King came to town to brew a sour wit ale with spices to christen one of our new-to-us foeders at Bruery Terreux. We designed a recipe with bitter orange peel and coriander and set it to ferment and age with our mixed house culture and Bavarian wit yeast in the designated foeder for four months. Using the Jester King house culture for bottle conditioning, Bouffon features some of the classic notes you’d look for in a wit, including banana, pear, vanilla, bubblegum, white pepper, lemon and a signature yeast profile. It also shines with the wild character from its cultures and collaborators at Jester King and Bruery Terreux.

Keg at BD Soho, 16/04/18. Lightly hazed golden with a decent off white cap. Nose is tarte citric peel, lime jus, yeast esters, grains, mellow funk. Taste comprises lime zest, damp cloth, funk, grass, mellow soured fruit rinds, green berry licks, lemon tinged straw, balsa wood, pinch of spice. Medium bodied, fine carbonation, semi drying close with a sharp citric tingle. Decent easy drinking sour.

Keg at BD Soho. It pours hazy yellow with a massive foamy white head. The aroma is earthy, funk, tart, spiced, green banana, clove rock, cereal, coriander, marshmallow, bubblegum, sweaty, lactic, cheesecake and some acetic action. The taste is dry, sweet - sour, lactic, cheesecake, zesty lime, zingy, lemon, orange rind, some mouth - pucker, peppery spice, acidic kick, oak, clove and some warmth with a drying and lingering tart finish. Medium body and fine, foamy carbonation. Certainly unique. Tastes like a sour hefeweizen, the base certainly comes through. Not sure the balance is quite there, but it's good fun anyhow.

Flaska från Beergium drucken med ölföreningen. En snygg krispig wit utan så mycket kryddor eller wit-karaktär men med snygga lite funkiga toner från bakterierna i faten. Riktigt gott.

New Beer Distributors, NYC bottle: pours hazy yellow with a white head. Aroma is spicy, funky and with your rypical wit fruitiness. Taste is somewhat dour but to me was more about being a wit. Easy to drink and nicely funky.

750mL bottle, pours a cloudy golden with a small white head. Aroma brings out light spices, farmhouse yeast, and light wood. Flavour is dry, with rustic farmhouse yeast, oak and biscuity malt. Excellent yeast profile, finishing dry and slightly woody. Really good.
