Brewed with Toppling Goliath from Decorah, Iowa we decided to combine our Imperial Stout recipes and showcase one additional ingredient from one specific region. After an extensive boil this monster was the highest gravity wort we have produced out of our brewhouse. The result was a sweeter full blown Pastry Stout. After fermentation we decided to showcase Mexican vanilla beans from the Vera Cruz region. These beans lend sort of a creamy marshmallow flavor to the beer having us think of the chocolate crémeux dessert.

Draught @ MBCC 2019. Pours black with a brown head, light lacings. Aroma of roasted malt, caramel, chocolate, coffee, maple syrup. Flavor is sweet, rich malty, caramel, chocolate, coffee, alcohol. Full body, oily mouthfeel, soft carbonation, sweet finish with warming alcohol. 100519

Tap at Cap Hop. Pours quite dark with a tan head. Aroma of chocolate and vanilla with a note I can’t place. Very full bodied. Flavor is creamy vanilla, chocolate, toffee/caramel, toasted coconut. Likely even more. Could be coffee. There’s a lot going on with this. Very likely it’s heading for pastry/dessert ale. Great flavors.

Tap at MBCC. Pours black-dark brown. Aroma and flavor are sweet, chocolate, mocha, coffee, roast, malt, booze. Overall: good.

Fat på MBCC 2019, blå session. Svart med mörkbrunt skum. Inte jättestor arom, men i smaken rågsyrligt med toner av kaffe, vanilj och mängder av rostad kokos. Sött och lite syrligt.

On tap at MBCC '19, blue session. Coal black body, covering fawn coloured head leaving spotty lacing behind. Smell of chocolate malts, lightlt roasted. Powerful taste of vanilla chocolate on a backbone of syrup. Roasted malty sweetness to a mouth filling finish. Solid sipper. (Copenhagen 10.05.2019).

Tap, as Moksa / Toppling Goliath Crémeux. Black color with tiny beige head. Aroma is vanilla, chocolate, but the vanilla really takes over Taste is lots of vanilla, chocolate, extremely sweet. Oily mouthfeel with low carbonation. Phew, just too oversweet.

[ As Moksa / Toppling Goliath Cremeux ].
ABV: 15.1%. Unclear dark black brown colour with a small, fizzy, virtually none lacing, mostly diminishing, light brown head. Aroma is moderate to heavy malty, roasted, chocolate, vanilla, dark malt, sweet malt, caramel and then again vanilla and chocolate. Flavor is moderate to heavy sweet with a long long duration, vanilla sweet, chocolate, dark malt, sweet malt, chocolate - vanilla, vanilla, vanilla - marshmallow. Body is medium to full, texture is oily, carbonation is soft to flat, finish feel is warming and light alcoholic. [20190508]

Poured from a 500 ml bottle. Aroma is malt forward with quite a bit of coffee and roast. Light vanilla notes with quite a bit of alcohol spice. An odd, nutty, herbal note as well. Pours black with a small, thick, mocha head that recedes quickly to the edges and disappears. No lacing and long legs. Flavor is fairly sweet with moderate chocolate notes as well as lighter roast, graham crackers, caramel and toffee. Medium light bitterness with light alcohol spice. Hints of anise and oak with medium light vanilla. An odd, earthy, musty note. Mouthfeel is full bodied with medium carbonation. Low astringency and medium low alcohol warmth. Overall, a decent beer but there is an odd note in both the aroma and flavor. Vanilla is there but it doesn't dominate.
