Farmstead® Ale Aged in Oak Barrels

Samuel Hill (1820-1899) was our great-great-uncle and brother of Ephraim. He served in the Union army at the Battle of Gettysburg. An early agricultural innovator, he held several patents for milk cooling and cream separation. He moved a house, midwinter, with horses from North Greensboro to Greensboro Village and also helped build the first road from Greensboro to Greensboro Bend. In an attempt to honor this intrepid relative, we have crafted a base of buckwheat, spelt and Vermont wildflower honey. Following shifting seasons of rest in wine barrels and months of bottle conditioning, we are finally able to present a beer worthy of Samuel’s name.

Vintage 2021 (batch 5). 750mL bottle, pours a clear pale golden blonde with a small white head. Aroma has a nice toasted grainy base, rustic saison yeast, gentle bugs, and a hint of vinous notes -- very subtle, but complex. Flavour is nicely complex and integrated, with a good balance of wine barrel presence, gentle bugs, light lemon, and toasted grains. Cohesive, fairly complex, and very easy to drink. Definitely not at the level of what I remember of Le Sarrasin, but this is definitely great.

Bottle pour. Pours bright gold. White wine, lemon, floral, elderflower, minerally, gooseberry, lime zest, black pepper, light tart, light funk, light delicate cracker, grapefruit juice. Gorgeous soft spritzy body. Phenomenal.

Bottle. Thanks Matt! Pours pretty clear golden, small white head, decent lacing. Aroma is delicate, hill bugs, dusty, lemon, hint of stonefruit. Flavor is light tart, light plus funk. Light body, delicate and soft.

Bottle at the brewery. Pours clear gold with a white head. White wine, funk, honey, floral notes, grass. Amazing.

Bottle shared by friends. Cloudy yellow with white head. Citrus, a bit of funk, green grapes, white wine, light oak. Some tartness. Light body with fine carbonation. Superbly balanced with amazing elegance.

750mL bottled December 2020, drunk 11/18/22. Hint of haze. Bright marigold, burnished brass, white head slowly to spotty cover. Lots of Brett, lemon, wheat, very tart and bright, reminiscent of Vera Mae. Similar, tho less intense all around, than WoL Monks. Clean, big minerality, round fruitiness. Soft and sniffable, nothing aggressive. Lemony-brett and piquant acidity with soft wheat, gentle honey-like malt and good attenuation. Great balance of acidity, juicy and tart but with excellent maltiness. Excellent flavors. As delicate as WoL Monks is intense. 750mL bottled December 2021, drunk 10/6/23. Upping slightly - this is just so delicately flavorful, clean and well-presented. Seems the extended bottle conditioning really pays off.

750ml bottle pours out straw color topped with a white head. Nose is great citrus funk grass. Taste is more of the nice citrus funky notes and plenty complex layers going on.
