Farmstead® Ale Aged in Oak Barrels
Samuel Hill (1820-1899) was our great-great-uncle and brother of Ephraim. He served in the Union army at the Battle of Gettysburg. An early agricultural innovator, he held several patents for milk cooling and cream separation. He moved a house, midwinter, with horses from North Greensboro to Greensboro Village and also helped build the first road from Greensboro to Greensboro Bend. In an attempt to honor this intrepid relative, we have crafted a base of buckwheat, spelt and Vermont wildflower honey. Following shifting seasons of rest in wine barrels and months of bottle conditioning, we are finally able to present a beer worthy of Samuel’s name.

50th anniversary gift from my friend Marty - who lives close-by the brewery. Lightly hazed, bright golden-yellow colour with a white frothy head, decent retention and wet-soapy lacing. Funky aromas with a touch of sourness, apple cider vinegar and apples. The apples notes come out a little more in the taste, with a soft sour feel and hints of the wine-fruitiness lingering. The honey is well-hidden, as not overly sweet. A wet mouthfeel with a tad dryness, tartiness. Everything is well-balanced here, with nothing sticking out like a sore thumb. Quite a refreshing funky ale with the soft wine barrel aging.

Tartish, funky and farmyardy with some fruits, citrus, lemon, honey and vinous oaky, hints of sourness. Quite balanced and complex.

Bottling date May 4 2022. Tart blend of lactic, acetic and malic acids. Elegant, lots of nice graininess from the buckwheat and spelt. Touch of bright lemon and green apple, plus stone fruit skins and honey character without too much sweetness

From bottle at Wild Fest 2025. Tart, funky, fruity, lemon, straw. Medium sour, dry conclusion. Body is medium. Great, complex.

750mL bottled December 2021, drunk 10/6/23. Upping slightly - this is just so delicately flavorful, clean and well-presented. Seems the extended bottle conditioning really pays off.

750mL bottled December 2020, drunk 11/18/22. Hint of haze. Bright marigold, burnished brass, white head slowly to spotty cover. Lots of Brett, lemon, wheat, very tart and bright, reminiscent of Vera Mae. Similar, tho less intense all around, than WoL Monks. Clean, big minerality, round fruitiness. Soft and sniffable, nothing aggressive. Lemony-brett and piquant acidity with soft wheat, gentle honey-like malt and good attenuation. Great balance of acidity, juicy and tart but with excellent maltiness. Excellent flavors. As delicate as WoL Monks is intense.

Bottle pour at WFG. Opaque orangeish golden with a white head. Citrus zest, white grapes, light sweetness and moderate grain notes, some fruity honey and elegant funk. Sophisticated.

Batch 5, Dec 15, 2021. Pale, hazy. Not much head. Complex buggy aroma, some brett, pedio both. Good honey character, also stone fruit and cantaloupe when you dig deep into the nose. Soft melony, vinous flavour, some golden plums, grapefruit, and a bit of bugginess. Off-dry finish, with a hit of pale malt. Very complex. Fantastic.
