Farmstead® Ale Aged in Oak Barrels

Samuel Hill (1820-1899) was our great-great-uncle and brother of Ephraim. He served in the Union army at the Battle of Gettysburg. An early agricultural innovator, he held several patents for milk cooling and cream separation. He moved a house, midwinter, with horses from North Greensboro to Greensboro Village and also helped build the first road from Greensboro to Greensboro Bend. In an attempt to honor this intrepid relative, we have crafted a base of buckwheat, spelt and Vermont wildflower honey. Following shifting seasons of rest in wine barrels and months of bottle conditioning, we are finally able to present a beer worthy of Samuel’s name.

750ml bottle at share. Cloud day good laden pour, thin white foamy head. Tart, musty aroma. Taste is a bit of farmhouse funk, sweet, fruity, grassy.

Bottle shared in Canaan with Sander, Rick, Greg and Mark. Pours clear gold (early pour) with a small, foamy white head. Delicate, delicious, fine white wine notes, mild lemony tang, soft funk, light pale wood dryness. Light bodied with fine, massaging carbonation. Balanced finish, lightly quenching, lovely oak, citric notes, restrained funk. A stunner.

Bottle thanks to Mike. Pours golden with medium white head leaving spotty lacing. The aroma is strong buckwheat, citrus, brett, oak. Slick body, brett, grape skin, buckwheat, oak, mineral, nice tartness, enjoyed this.

Bottle shared @ Blåbær Lambik Release 2019 thanks to Shu! Pours lightly hazy golden with a white head. Notes of classic HF esters, oaky, floral, honey, light spice, spelt (yeah sure), lightly acidic.

75CL. Acquired on release day. Split 2 ways at 50F. I always prefer to let Shaun's beers sit at least 30 days...sometimes 90 after acquisition. Allow all yeast to settle at cellar temp but when someone told me this beer is worth $500, I thought well let's increased the value by drinking one of them and more importantly, enjoy the beer as Shaun does release beers when ready.

A - Gorgeous golden amber. hazy from the finishing yeast in the bottle. tiny champagne like bubbles rise to the top at a rate of 25 a second. A 4 finger lightly whipped head fades to a single thin line after 2 minutes.

S - Aroma is lemon zest, cream, fresh cut grass, malted wheat, sauvignon blanc and honey. A little groundwater sulphur smell.

T - Fantastic taste. A young Sarrasin flavor. Lightly sweet in the middle, dry lingering wheat finish. Lemon pie, persimmon, mulch, pine, grape must, juicy fruit and oak..but no char or lingering bitterness.

M - Very smooth, it has light carb, almost oily. I'm guessing drier and more lasting mouthfeel with a bigger body will come with time and age.

O - Great out of the gate. It's one of those beers though that you think I can't age this, it's already too sour but knowing HF, the sour qualities of the will remain linear through time and the mouth feel and drinkability will increase substantially. I hope to enjoy this again 2-3 years from now. Art, Flora, Ann, E and others are fantastic with 3-5 years. I expect nothing less from Samuel but the brewer would probably prefer we all enjoy these in 2019.
