History
Alaskan Spruce IPA is brewed with Sitka spruce tips in a nod to the Sitka spruce trees that shade much of the Tongass National Forest and parts of Alaska. These evergreen conifers define the rugged coastline and untamed forests of Southeast Alaska, and have been used by locals for hundreds of years. Spruce tips are often used in cooking, with their tart, lemony flavor adding brightness and zest to recipes. There is a long, if little-known history of brewing with spruce tips: Captain Cook’s own journals mentioned adding spruce tips to his brews, both for flavor and to help his crew fight off scurvy. Sitka spruce tips are remarkably similar to noble hops, which are identified by low bitterness and high aromatic characteristics, and add citrus and pine flavor, as well as unexpected spruce and bubblegum character.
The Story Behind the Label
Snowy owls, with their unmistakable snow-white feathers, are native to the Arctic tundra and can be found gliding over the stark beauty of meadows and tussocks north of the Arctic Circle. In Southeast Alaska, they are known as “ghost owls”, as these pale, quiet owls appear suddenly and inexplicably in some winters but not in others. When outside of their tundra habitat, snowy owls perch and hunt from the thick canopy of Sitka spruce that shades the forest floor, swooping silently down to capture their prey. The bold, unexpected appearance of snowy owls aloft in the Tongass forest mirrors the bold hops and surprisingly tart, berry-like bubblegum character of Alaskan Spruce IPA.

12oz bottle. Filtered light tan-prange body. Thin off-white head. Big, clean golden malt tones. Pleasant piney hop tone accentuated by the spruce. Sweet more than bitter or hoppy. Classical, well done stuff.

Pours a medium gold, clear, an inch of foam and good lacing.
Smells of caramel malt and pine, balanced.
Taste is of caramel malt, pine, kinda resinous, mid palate I get some of the spruce, but overall a balanced IPA, which I like.
Medium body with a sticky mouthfeel.

Bottle from Total Wine in Sacramento, CA. Pours bright gold with a foamy white head. Aroma of slightly roasted malt with evergreen notes. Med body or so. Flavor is very lightly roasted malt with hop overwhelmed by spruce. It's fairly dry, and nicely bitter. Getting light hop burn on tongue edges. Nice change of pace.

12 oz bottle from a six pack. Aroma is kind of faint; lightly perfumy, light spruce. Pours clear new penny copper with a collapsing bone white head that laces a bit. Taste is light to moderately bitter with some candy sweetness alongside. Fairly spruce-forward in flavor. Interesting.

On Tap at PreFunk Boise Deep copper with a thin white wispy head. Mild subtle hoppy aromas and flavors. Just a hint of piney spurceness. Medium body and not very bitter for an IPA.

Crowler from Growler Guys. Pours out a bright medium gold, clear, small fluffy head fades to cap, leaving curtains of lacing. Aroma is malt and pine, with the spruce moving forward in the taste, piney, dry and bitter. Nice feel, lingering bitterness.

Sample at GABF 10/07/2017, thanks to my bro for assistance with note-taking. Clear orange-gold color with a medium white head that diminishes gradually. Sticky strings of lace. Aroma of spruce tips, hops and malt. Medium body with flavors of fruity hops, spruce and malt. The finish is moderately bitter with a spruce and hop aftertaste. Above average overall.
