History
Alaskan Spruce IPA is brewed with Sitka spruce tips in a nod to the Sitka spruce trees that shade much of the Tongass National Forest and parts of Alaska. These evergreen conifers define the rugged coastline and untamed forests of Southeast Alaska, and have been used by locals for hundreds of years. Spruce tips are often used in cooking, with their tart, lemony flavor adding brightness and zest to recipes. There is a long, if little-known history of brewing with spruce tips: Captain Cook’s own journals mentioned adding spruce tips to his brews, both for flavor and to help his crew fight off scurvy. Sitka spruce tips are remarkably similar to noble hops, which are identified by low bitterness and high aromatic characteristics, and add citrus and pine flavor, as well as unexpected spruce and bubblegum character.
The Story Behind the Label
Snowy owls, with their unmistakable snow-white feathers, are native to the Arctic tundra and can be found gliding over the stark beauty of meadows and tussocks north of the Arctic Circle. In Southeast Alaska, they are known as “ghost owls”, as these pale, quiet owls appear suddenly and inexplicably in some winters but not in others. When outside of their tundra habitat, snowy owls perch and hunt from the thick canopy of Sitka spruce that shades the forest floor, swooping silently down to capture their prey. The bold, unexpected appearance of snowy owls aloft in the Tongass forest mirrors the bold hops and surprisingly tart, berry-like bubblegum character of Alaskan Spruce IPA.

On Tap. orange color. Hops in the aroma. Very light spruce/pine character, I would have liked more. Resinous hops. Starts lightly sweet and finishes dry. Good palate.

From a 12 oz. bottle. Pours a clear copper with an off white head. Aromas of pineapple Flavors are bitter citrus and pine.

Saturday 9th March 2019, draft in the Beach Hut Deli, Mission Viejo. Thin white head on a golden body, my 16 oz came in a 'Bells' badged sleeve glass. Malts first in the aroma and taste, followed by a mild piney (spruce I guess) nose and flavour. Liked it.

Bottle" Poured a coppery golden with a off white creamy one finger head. Aroma is hoppy with a little fruity hint. Taste is that spruce fruity pebbles like forward that subsides to some nice hoppiness and malt balance.

Bottle. Pours a golden color with a small white head. Has a fruity malty caramel hoppy spruce aroma. Fruity malty spicy hoppy spruce flavor. Has a fruity malty spicy hoppy spruce finish.

Bottle as pictured. Pour is pale yellow with a quickly fading head. Nose is certainly IPA - ish. Taste is big boggie IPA as well. Bottle says best by 4/8/18. Pretty good carbonation for a IPA. Says 7% alky but it comes across a little milder.

12 ounce bottle. Clear copper, thin foamy white head, fair retention. Aroma of pine, spruce. Taste is berries, spruce, pine, caramel malt. Medium bodied, mild lingering bitterness.

12 ounce bottle into tulip glass, best before 5/4/2018. Pours slightly hazy deep golden amber/light orange color with a 1-2 finger fairly dense and rocky off white head with awesome retention, that reduces to a nice cap that lasts. Thick soapy lacing clings around the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big tangerine, grapefruit, lemon, peach, pineapple, passion fruit, papaya, mango, melon, citrus peel/zest, spruce, light pepper, pine, light caramel, toasted bread, herbal, and floral/grassy earthiness. Damn nice aromas with great balance and complexity of citrus/fruity/tropical/pine hops, spruce tips, and moderate bready malt notes; with great strength. Taste of big tangerine, grapefruit, lemon, peach, pineapple, passion fruit, papaya, mango, melon, citrus peel/zest, spruce, light pepper, pine, light caramel, toasted bread, herbal, and floral/grassy earthiness. Light-moderate pine, citrus peel, herbal, grassy, spicy bitterness on the finish. Lingering notes of tangerine, grapefruit, lemon, peach, pineapple, passion fruit, papaya, mango, melon, citrus peel/zest, spruce, pepper, pine, light caramel, toasted bread, and herbal/floral/grassy earthiness on the finish for a while. Great complexity, robustness, and balance of citrus/fruity/tropical/pine hops, spruce tips, and moderate bready malt flavors; with an awesome malt/bitterness balance, and zero lingering hop astringency after the finish. Light-moderate increasing dryness from bitterness. Medium carbonation and body; with a very smooth, moderately bready/grainy/sticky, and lightly resinous/rindy balanced mouthfeel that is great. Zero warming alcohol for 7%. Overall this an excellent spiced IPA! All around great complexity, robustness, and balance of citrus/fruity/tropical/pine hops, spruce tips, and moderate bready malt flavors; very smooth and refreshing to drink; with the modestly bitter/drying finish, never aggressive. Chinook, Citra, and Denali hops; great hop profile. Really great balance of juicy/lightly dank hops and spruce tips; solid bready malt backbone, with minimal residual sweetness. Very impressive for a spiced IPA, well restrained on the spruce tips. A very enjoyable and well made offering.

The first bottle of Spruce IPA comes from a six pack bought at my newest best craft beer store. I lift most of the 12 oz bottle into a bar beer glass and find a honey-colored clear body, lots of carbonation seen through the glass.The head is an egg shell white and shows some perpetuity. A good sniff delivers pine tree and a light floral, no real surprise. The taste though, somewhat different. Heavy on the pine but easy on the hops, more from the flower garden, light on the bitterness. Rather distinctive actually, I think I could pick it out in a blind tasting easily. Well worth the try.
