Winter beer in this series since 2013. Flavoured with cherry, cumin, liquorice and coriander.

Kapittel Winter is een romantische kerstsfeermaker die ieder jaar in beperkte oplage gebrouwen en gebotteld wordt. Dit mahoniekleurige abdijbier heeft het aroma van donkere Belgische fondantchocolade. Bij het proeven wordt een toets van kersen, gedroogde bessen en donker mout waargenomen.

330ml bottle from Auchan Grande Synthe. Pours a hazy dark brown, overly exuberant tan head that fills the glass. Aroma is soft dark malts, chocolate, lightly sweet yeast and a nutty warmth. This continues to taste, not overly spicy, instead relying a nice soft dark sweetness and with mild chocolate shades. Yeah I liked it.

33cl Bottle from Deen. Dark brown colour, beige head. Aroma of sweet malts, subtle winter spices, dark fruits, some chocolate, hint of roast. Flavour is sweet, malty, some amber malts, dark fruits, spices, some ground clove and mace, Belgian yeast, bittersweet finish. Medium bodied, creamy mouthfeel. Nice.

Draught @ Sivukirjasto. Aroma has spicy tones and tart-ish berries. Mulled wine? Aroma has sweetish berry juice, some tartness, sweet malt and vanilla. Odd, a bit too tart for my taste.

Clear deep amber colour, good two finger frothy off-white head, heavy lacing, receding slowly. Aroma roasted malts, caramel, dark fruits, brown sugar, spicy notes. Taste light heavy sweet and light bitter, roasted malts, burnt caramel, sugary. Malty sweetbitter aftertaste, bit earthy, spicy notes, creamy texture, soft carbonation, quite down to earth dubbel.

Que les moines ont l’air heureux avec leurs bonnets de Noël, trinquant avec leur Kapittel Watou Winter, bien au chaud dans leur abbaye alors que la neige et le froid se présente au dehors! Nos moines sont cependant pas des plus exigeants, car si la Kapittel Watou Winter est globalement agréable tout en respectant à minima les codes d’une bière de Noël, celle-ci présente des limites notables, notamment en terme de complexité et de structure (arrière bouche et final). La bière est plutôt plaisante en verre, pourvue d’une belle robe brune, d’une effervescence marquée avec une multitude de fines bulles et d’une belle mousse beige et crémeuse de 4 centimètres d’épaisseur s’affaissant progressivement en formant des formes de cratères. Le nez est soyeux mais peu développé avec une belle alliance fruits rouges mûrs (dont pruneaux) et épices (coriandre et cannelle). L’amertume se fait présente dès l’attaque, lui conférant ainsi une certaine fraîcheur sur des arômes sous-jacents de cannelle et de pruneaux. La seconde bouche laisse s’exprimer plus en avant l’amertume, franche et agréable, mais qui, couplée avec une arrière bouche trop peu développée et intensité et en complexité (sur des arômes de candi et de pruneaux) ne permet pas de conférer une densité suffisante à l’ensemble. L’alcool, tout juste correct pour le style, d’un titrage honnête de 7,8 % Abv, ne confère pas suffisamment de puissance à la bière qui peine en longueur avec un final sur des notes épicées et soyeuses. L’ensemble est globalement homogène et plaisant, on s’ennuie cependant très vite avec cette Kapittel Watou Winter, il faut donc mieux être bien accompagné comme nos chers moines sur la bouteille pour passer un vrai bon moment.

New Kapittel beer for the winter season, bottle bought at a Deen supermarket in the Netherlands - ironically, since I have not yet seen this beer anywhere in Belgium. Very thick and frothy, egg-white, very moussy and well-retaining, irregularly lacing head, brownish bronze-ish amber, translucent colour with somewhat coppery hue, lightly hazy. Aroma of caramel, damp cloth, soapy coriander, overripe pear and even some medlar, ripe purple gooseberries, butterscotch, cooked salsify, spinach, sweet potato, hay, banana, something sweaty, faint hint of cooked chicken. Spritzy onset, a tad overcarbonated for the style, minerally, overpowering the basic hints of sweet and sour fruitiness, reminiscent of pear, redcurrant, apple peel and vague banana; full and lean mouthfeel, but coarsened by the overcarbonation. Bready and lightly nutty maltiness in the middle, softly bittering toasted edge towards the end, meeting spicy phenols (though not exagerratedly so) and lingering fruit esters as well as a herbal, earthy and leafy hop bitterness, some soapiness probably coming from coriander (yet very subtle for once) and bready yeastiness especially after adding the sediment; warming afterglow of white rum-like alcohol, eventually becoming just a little bit wry and tiring, which should not be the case in a beer below 8% ABV. Protein flavors seem to hang around a bit too. Het Kapittel covers a whole range of loosely abbey ale-style, traditionally Belgian beers and some of them are classics, with sometimes great cellaring potential (I remember a beautiful vintage Prior at Kulminator, recommended - and poured - by Tim Webb himself), but this one does not do the trick for me: it has a cooked vegetable-like effect I can hardly appreciate, is overcarbonated, lacks finesse and has too much alcohol in the finish. More an overly alcoholic, lightly spicy, soapy and coarse Belgian dubbel (or even amber - this clearly paler than average for its designated style), and I have not managed to truly enjoy this one, drinkable and technically decent as it may be. Van Eecke can do a lot better.

Flesje gedeeld met familie. Donkerbruin helder bier met matig schuim. Aroma van framboos en kers, smaak van donker fruit en is ietsje caramelachtig en bitter. Nasmaak is iets hoppig.

Fles gedeeld met Inoven en JoepvW op tweede kerstdag. Het is een kruidig amberkleurig bier met veel koolzuur. Het heeft een flinke schuimkraag.

Many Thanks for This Winter Beer to Mr. Eric De Geyter. Big Thanks for that. Piwo ma spora bezowa grubo ziarnista piane, szybko rosnaca, ale tez szybko opadajaca. Kolor brazowy z burgundowymi refleksami. Metniste, Pachnie i smakuje daktylami. Kolejno w ustach figi, czekolada, nieco lukrecji i czerwonego pieprzu troche cynamonu takze. Ogolnie piwo ma profil slodki nawet bardzo, ale na chlodne jesienne wieczory moze byc.
