Straffe Hendrik Wild is only bottled once a year.
The beer needs a longer maturing period in the bottle before it can be released and therefore first matures in the bottle for three months in the cellars of the brewery. The refermentation wilth wild yeast is only finished after three months and the young beer is palatable.
The beer will conitue developing in the subsequent years. The bitter hop aromas will become softer, whereas the wild Brettanomyces yeasts will conitue working and creating hints of fruit, flowers and wine.

33cl bottle at home (17 V 2020), as Straffe Hendrik Wild 2015. Disclaimer: this brew has aged pretty good - UHT 9 III 2020 - but be aware of gushing effects. A beautiful hazy body of chesnut brown to dark orange coloured brew with off white frothy irregular head. The nose has some barn flavours, with malt and yeast and even caramel features. There is banana in there as well, adding to the sweet aromas. Spices are omnipresent, with many dashes of black pepper and some cinnamon for sure. The mouthfeel is very pleasing, with a fine malt-sugar balance and a brett bitter ending, leaving the tongue with green herbs, spices, oranges, leaves, rye, straw, yeast. For me, this is a strong blond version of Orval - a beautiful comparison. A personal brett-favorite too. The ABV of 9% is quite high, making up for a full and strong bodied experience... which perhaps is a that too boozy.

Previous rating (27 IV 2015): 10cl sample at the Zythos Beer Festival (Leuven, April 25th 2015). A beer very different from the normal Straffe Hendrik: Is it fair to say that this beer is an Orval Trappist challenger? It certainly has the same dry Orval taste - very dry even. The golden brew has some sweets, some bitters. Lovely, although in a duel... I definitely would prefer the Orval.
