A beer that pays homage to a centuries-old tradition of combining new beer with aged “stock ales.” Freshly brewed beers of the day often were very smoky and bitter tasting, and were blended with older beer that had mellowed with age to produce more drinkable libations. This modern brew showcases our brewers’ talents in blending a stock ale aged more than three months in oak foudres (large wooden fermentation vessels) with a fresh version of the same beer to create a perfect harmony spanning end to end on the taste spectrum.
Stone co-founder Greg Koch has hypothesized for years that brewing the same beer at two different alcohol levels and blending them would provide a different flavor profile than brewing the base beer to a specific alcohol target. And this is true. When compared with beers brewed to lower gravities, fermenting at a higher gravity with a higher resulting alcohol level causes a drastically different mix of esters and other flavor compounds provided by yeast fermentation. Proof comes via this beer, which follows a decidedly English track, using 100% English malts and hops a la traditional stock ales, which I learned a lot about while conducting research for my book "IPA: Brewing Techniques, Recipes and the Evolution of India Pale Ale." It was fun to be able to draw on this research as the inspiration for this beer.

Very creamy white head stayed on a lightly effervescent dark golden body. Sour fruits, citrus, mango with caramel & brown sugar. Full bodied smooth to top fore, tingly on the back - cloying. Dry. A very bitter/sweet affair. Vinous. Caramel, brown sugar & malts followed by a back of sour stewed dark fruits, citrus, grapefruit with a really bitter aft.

22oz bottle. Murky amber-copper body. Thin, soapy, off-white head. Quite brett forward, this drinks like an oddball strong Belgian Ale. Somewhat soapy, astringent, phenolic. The barrel version seems to really be overbearing, almost giving it an Adambier feel, oily, brett dominated. An odd creature.

Bottled. A amber beer with a yellowish head. The aroma has notes of straw, yeast, and malt. The flavor is sweet with notes of straw, wood, caramel, and fruits, leaving to a dry finish.

22 fl oz bottle. Pours hazy orange with a small white head. Aroma is smooth bretty, fruity and mild peachy. Bretty, smooth fruity, peachy. Smooth brettty and crisp fruity finish.

Footbalmed the rest of the bottle, I don’t get it. Maybe that’s why it was on sale.

650 ml bottle at the Hoppy Pub, Thessaloniki. Almost clear orange color with off white head. Malty and hoppy aroma, caramel, fruity, grassy, wood. Sweet and bitter taste like aroma. Medium oily body with soft carbonation.

bottle - Hazy gold pour with a small off-white head. The aroma is malty, kind of fruity, and earthy. It’s different with some sweet malt flavor, caramel, fruit, maybe some spiciness... medium bodied. Interesting and drinkable enough if not that great for Stone.
