A Blend of Fresh and Barrel-Aged Ales

A beer that pays homage to a centuries-old tradition of combining new beer with aged “stock ales.” Freshly brewed beers of the day often were very smoky and bitter tasting, and were blended with older beer that had mellowed with age to produce more drinkable libations. This modern brew showcases our brewers’ talents in blending a stock ale aged more than three months in oak foudres (large wooden fermentation vessels) with a fresh version of the same beer to create a perfect harmony spanning end to end on the taste spectrum.

Stone co-founder Greg Koch has hypothesized for years that brewing the same beer at two different alcohol levels and blending them would provide a different flavor profile than brewing the base beer to a specific alcohol target. And this is true. When compared with beers brewed to lower gravities, fermenting at a higher gravity with a higher resulting alcohol level causes a drastically different mix of esters and other flavor compounds provided by yeast fermentation. Proof comes via this beer, which follows a decidedly English track, using 100% English malts and hops a la traditional stock ales, which I learned a lot about while conducting research for my book "IPA: Brewing Techniques, Recipes and the Evolution of India Pale Ale." It was fun to be able to draw on this research as the inspiration for this beer.

Pours muddied caramel color with off white head. Fruity, musty and woody aromas with some grapes and caramel. Similar flavors but not very good tasting. Medium body with moderate carbonation.

Draught @ Ginger Man. Cloudy reddish orange with very small frothy white head, low carbonation, faint vanilla aroma, slightly bitter woodsy taste with oak flavor, long woodsy bitter finish. Smooth but pervasively woodsy brew.

Bomber de Lueken’s Liquor, Dunedin. Léger orangé, col blanc-cassé. Arôme est intéressant et semble mélanger plusieurs style avec un bouquet de foudre qui s’annonce après qcq minutes d’ouverture de la bouteille. Retrouve aussi un rétro-nasal plus centré sur les houblons nobles. Palais est réchauffant, malté pâle, cara. Fruité modéré tirant sur les agrumes avec un niveau alcool qui se fait bien sentir. Boisé reste assez modéré mais ajoute cependant une certaine note de tannin et fine pointe aigrelette. Certaine sécheresse - Appollo - perdure en fin de bouche. Je note aussi un léger herbacé sur la fin qui laisse penser au basilique ou à la sauge. Reste correcte mais au final, on est perdu se demandant où Stone veut aller avec cette bière.

Clear orange beer, creamy off-white head, pretty stable, adhesive, leaving a nice lacing in the glass. Aroma: sweet, fruity, some marzipan, bit sugary, artificial brett notes. MF: soft carbon, medium body. Taste: pretty bitter, soapy, bit fruity, funky, artificial brett, Aftertaste: very bitter, slightly funky, quite alcoholic, soapy, some tannins, very bitter, pretty medicinal, funky. Why all those hops?

Draft @ The Ginger Man - NYC, New York. Pours a slightly hazy pale orange color with a small white head. Has a fruity malty spicy oaky caramel aroma. Fruity malty spicy oaky caramel and vanilla flavor. Has a fruity malty spicy oaky caramel and vanilla finish.

Bottle. A- Spices, caramel, biscuits. A- Amber color, clear liquid, off white head. T- Spices, caramel. P- Medium body, average texture, average carbonation, unbalanced finish. O- This was interesting and not in a good way. Unbalanced and all over the place with the flavor. Yuck.

Bottle: Pours a flat copper color with a smaller sandy head. The nose is earthy, bready, woody, and hints of rye. There is a floral bitterness in the taste, wood, and rye. Ever so slightly sweet in the middle… The bitters and rye linger in the finish. Dry. Definitely has that wood aged feel.

Sampled at ABR 2015. Orange color. This is dry, fairly well hopped. Malt also, dry grain, fairly well balanced but overall quite dry. High abv is hidden in the flavor but I suspect contributes to the dry taste and finish.

Bomber. Pours a clear golden orange hue with a large white head. A vinous yeasty berry nose. Huge oak, pepper, vinous white wine, cherries. Very odd but interesting mix. Sweet toasted marmalade malts. Drinkable. Interesting.
