A Blend of Fresh and Barrel-Aged Ales

A beer that pays homage to a centuries-old tradition of combining new beer with aged “stock ales.” Freshly brewed beers of the day often were very smoky and bitter tasting, and were blended with older beer that had mellowed with age to produce more drinkable libations. This modern brew showcases our brewers’ talents in blending a stock ale aged more than three months in oak foudres (large wooden fermentation vessels) with a fresh version of the same beer to create a perfect harmony spanning end to end on the taste spectrum.

Stone co-founder Greg Koch has hypothesized for years that brewing the same beer at two different alcohol levels and blending them would provide a different flavor profile than brewing the base beer to a specific alcohol target. And this is true. When compared with beers brewed to lower gravities, fermenting at a higher gravity with a higher resulting alcohol level causes a drastically different mix of esters and other flavor compounds provided by yeast fermentation. Proof comes via this beer, which follows a decidedly English track, using 100% English malts and hops a la traditional stock ales, which I learned a lot about while conducting research for my book "IPA: Brewing Techniques, Recipes and the Evolution of India Pale Ale." It was fun to be able to draw on this research as the inspiration for this beer.

A weird one. Poured from bottle a sort of red orange brown. Lots of bitter chocolate almost smokey but also caramel. Something didn?t work though.

Tap at Yellow Ape. Interesting smell, bit of manure and vegetables, maybe some oak, booze. Taste is good, feel the strength, malty, little bit spicy, brown bread. Ginger? Nice taste, but the smell lets it down.

10-04-19 // on tap at Stone Brewing World Bistro & Gardens - Berlin Strange and interesting. Sweetish malts, a belgian kinda touch. Herbal notes, mild boozy.

On tap @ Stone Berlin. Smooth dry roasted Malt. Round and deep, malt, caramel, slightly grainy. Round dry malty, a bit dusty, malt, caramel with a moderate bitterness. Nice.

Vom Fass Stone Brewing Berlin 2016-06 getrunken. Handwerklich gut. Vielleicht überdenken die Leute von Stone mal ihre unkompromislosen Einsatz von Hopfen. Schade ist mir ist dieses viel zu bitter.

On Tap at BrewDog Nottingham. Rich Ruby colour with a thick creamy white head. Aroma fruity, rain and citrus. Taste has a heady sweetness. Full rich and full bodied.

Draught @ BrewDog Clapham Junction, 11- 13 Battersea Rise, Battersea, Greater London, England SW11 1HG. [ As Stone Stochasticity Project HiFi+LoFi Mixtape ].Clear medium amber orange colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel, wood, oak, light berry - fruit. Flavor is moderate sweet and bitter with a average to long duration, oaky, caramel, dry, dried fruit. Body is medium, texture is oily to watery, carbonation is soft to flat, finish feel is light alcoholic. [20150805] 7-3-7-3-15

Odd duck of a beer, semisweet and bitter yet with an unexpected brett-like funk forcing its way into the party. Not sure if wild yeast is a component, but damned if it doesn’t taste and smell like it, with a leathery barnyard pungency accenting the woodsy oak undertones. Pours swell enough, but the nose is mildly off-putting, stinky and, well, almost urine-like to be honest. Too funky. Kinda gross, actually. Curious taste, though; starts mildly sweet like a strong English ale, toffee and caramel and dates, then gains a heavy oak backside, medicinal and dry, with all sorts of horseblanket complexity underneath. Booze peaks through as it warms--surprising for a beer that’s two friggin’ years old--and the fade is all oak and funk. Again, not sure if the funk is the result of design or this beer sitting on a liquor store shelf for two years, but it’s a strange brew nonetheless.

Bottled (MT/KS/MB February tasting). Finally reached the end of beers for this session. Murky ambery brown colour with a small off-white head. Aroma has some brett, mild spices, some alcohol and mild smoked notes. Flavour is quite similar, but also has a rather strong bitter edge to it. Mild tart wooden notes toward the finish as well.

Refrigerated brown bomber poured into a snifter. Cloudy orange with small white head. Aroma is caramel malt, medium body, lower carbonation, and little carbonation. Taste is caramel and oak.
