Dit gelimiteerde bier is het moederbier van onze Oud Bruin. Het is een single-cask, wat betekent dat het bier geen blend is van verschillende vaten, maar volledig uit één vat komt. Anders dan de klassieker is het ook niet geblend met jong bier. Het Foederbier rijpte 2 jaar op grote houten vaten van 40 of 50 HL. Foederbier heeft meer hints van rood fruit en is meliger op zuren.

Small, irregular cream-coloured head, if rather stable for an Oud Bruin over reddish cola-coloured beer. Lactic acid, brown candi sugar, fruity esters, diary (lemonyoghurt with brown sugar?), raisins in diluted alcohol. Lactic acid, oak, oakleaf, wet oakwood, sorrel. Pretty hard acidity, buttermilk. Acidburn and -thinning, yet quite slick, even oily feel. Not very carbonated. Pretty decent Oud Bruin, but rather harsh, not mild.

Bottle shared at a tasting at troubles' place. Cloudy amber. Funk, oak, vinous, fruitiness, a bit of caramel, sour, vinegar. Very good.

Clear chestnut color and a nice white head. Balsamico-acidic nose, vinegar. Tart sour-acidic, herbal and vinegar, hoppy.

Verzet's raw 'oud bruin' from a specific cask, had this from a 37.5 cl bottle last year (thanks Leopold for sharing) so apparently I am the only one here - to date - who had this bottled and not from tap at Dok, which surely must have been very different. Rating from old and concise notes so I should definitely re-rate this one when given the chance. Thin and irregular, off-white, open and dissolving head on a deep ruddy bronze beer with wine red hue. Aroma of sour blackberries, red wine vinegar, soaking wet wood, forest floor, damp earth, nut shells, sour apples, plum kernels. Sour onset with lots of berry-like esteriness, tad astringent but tempered by a softer, bit bready malt core yet with that typical vinegary edge that all Verzet's sours tend to have (intentionally as they claim), tannic woodiness in the finish with a very earthy quality, lingering 'red' sour fruitiness. Quite complex and seemingly a bit more accessible - less vinegary - than some of their other, more widely distributed 'oud bruin' variants, should age interestingly in this kind of bottles as well.

@ Dok, Ghent. Dark rede/brown colour. Aroma of wood, red wine, vinegar. Very tart, notes of red berries, some bitter hints. Refreshing.

5 April 2019. At Dok Brewing Company, Ghent. Cheers, Anke & Pieter! Pours clear brown-red, no head. Aroma of wood, sour cherry, yeast, almond, marzipan, vinegar, red grape. Taste is medium fruity sour, lactic & cherry-like, bitter touches of wood & nuts, vinegar & yeast gaining strength, lemon peel, sweetish apple & bittersweet grape. Dryish, tart, lactic finish, woody, cherry seed tannins. Medium body, slick texture, soft to flat carbonation. Quite quenching, not overwhelming.
