No More Sleep is a dark farmhouse inspired ale barrel fermented with mixed cultures in 80% spent bourbon barrels that previously held Sleeping Forever and 20% new oak. No More Sleep spent just over 6 months in these barrels fermenting and conditioning, then we blended all of the barrels together and bottle conditioned them for another 2 months. Powdery dark cocoa, oak tannins, bright tart cherry acidity, leathery, effervescent, and refreshingly dry.

Bottle. Pours black with medium tan head that lasts. The aroma is oak, leather, dark fruit, cocoa. Slick body, leather, oak tannin, tobacco, cherry juice, dry finish, very good.

Magnum, pours black with a small beige head. Aroma brings out saison yeast, earthy notes and oak. Flavour is quite complex, with oak, earthy notes, and barrels. Oaky and earthy. This is great.

Hotel room tasting. Opaque dark brown beer, small tan head. Palate is light, dry and fairly crisp. Thin dry dark malts. Little dark chocolate. Sour tart fruits. Light dry finish. Awkward as are most sour dark beers.
