Brimming Bin is a Wild Ale brewed in collaboration with our friends from Carton Brewing in New Jersey aged on Sauvignon Blanc and Chenin Blanc Grapes. This beer pour a dark golden yellow with slight haze and noticeable effervescence. Bringing the glass to the nose presents distinct aromas of chamomile, sweet pear, rustic bread, and dried orange peel with a subtle grassy funk. The palate unfolds with layers of ripe apricot, tart gooseberry, tangerine and crisp pome fruit. Mildly sour with a medium body and fizzy carbonation, Brimming Bin has a off-dry finish with a touch of minerality.

Panda at home, thanks to Dave, 26/03/21. Almost clear golden with a moderately appointed white covering. Nose is tarte grapes, funk, oak, wood must, damp hay. Taste comprises sharp citric rinds, light acidic bite, damp oak, apple core, light herb, funk, farmyard notes, lemon rind, grape must. Medium bodied, fine carbonation, drying close with a balanced acidic rise. Decent sour but expected a little more depth given the big boost ABV offered.

Panda 🐼 at home thanks to Wingmane. A light hazed golden coloured pour with a halo of off white head. Aroma is big funky white grape, vinous, oak, prickly vinegar edges, woody notes. Flavour is composed of prickly pear, white grape, oak, fuzzy peach in the finish. Tangy canned pineapple. Palate is dry and tangy, little prickly sour, highish carbonation. pinch of acid. Good complexity.

330ml bottle. Opalescent, yellow-ish, golden colour with small, frothy, fading, white head. Vinous fruity and funky yeasty, minimally floral aroma, notes of white grapes, subtle hints of gooseberry, orange peel, whiffs of chamomile, orange blossom, pale malty background with a minimally bready touch, a touch of grape sugar and honey as well, minimally dusty, yeasty overtones. Taste is mildly tart and sweet-ish, vinous fruity, slightly floral and mildly funky yeasty, minimally bready, pale malty, notes of white grapes, hints of gooseberry, orange peel, some chamomile, grape sugar, a minimally dusty, yeasty touch, whiffs of orange blossom, honey; well hidden alcohol. Slightly oily, watery texture, minimally dry and astringent palate, medium to coarse, prickly to lively carbonation. Quite rich and complex, lots of subtleties under the generic term white grapes, thereby rather mild, balanced, drinkable - extra point for complexity.

Sample from the bottle at Arde's Residence, Helsinki. Thanks Tiong! Color is cloudy golden with small white head. Aromas and flavours: Fruits, white vineous elements and sourness. Little bit of musty.

Bottled 12/20/18, drunk 2/1/19.
Mostly clear, sparkling brass-gold with a dusting of white head that quickly fizzles out.
Smells like celery seed? Black and white pepper and a bit of lemon up front, but quickly is joined by soft, bright, nearly juicy Brett and very mild lacto. Honey-like malts easily balance and there's nothing aggressive here. The interesting adjunct character isn't overdone and is a nice change of pace.
In the mouth it's excellently balanced with light lemon, honey and floral notes balancing lime zest-like acidity, lactic acid and moderate pepper-like character. Tight carbonation and a soft, malty texture with good restraint shown on the adjuncts. Very surprisingly excellent.

Bottle from Canton: pours misty gold with a white head. Aroma is bright fruitiness, with an obvious grape focus. Some wood is in there as well. Taste is moderately sour. Lots of grape flavor. Some fruitiness. Light sweetness. I would have never guessed this was a 10.9% abv beer. Solid.
