The simplicity of Trillium’s grist of barley and wheat delivers a wonderfully complex yet still approachable beer. The house blend of farmhouse yeasts and Columbus and US Goldings hops drive a distinctive character in this rustic, unfiltered ale. A beautiful nose of spice and pepper, coupled with flavors of fermentation-derived fruit and more pepper. Firm bitterness, nicely carbonated with a dry finish, but there’s also a wonderful smoothness in the mouthfeel from the wheat.

Bottle - Loght sweet honey notes and a touch of wheat. Cloudy gold with a decent white head. Light sweet grains and peppery honey notes. Light dry grassy finish.

Cloudy blond color, generous head. Strong spicy character, coriander, well blended with candied orange peel, light frankincense, and some astringency in the final

Hazy and light tan. Thick head. Has a vague phenolic farmy yeast. Soft body, sticky, lavender and honeyish malts. Heavy yeast character though. Mellow. Bit sweet in the finish, but otherwise ok.

750mL bottle, pours a cloudy dull golden with a small white head. Aroma brings out a nice farmhouse yeast, some pepper, and toasted malt. Flavour brings out nice farmhouse yeast, rustic notes, and some slight esters. Surprisingly nice for a North American saison. Rustic, light saison yeast, and light residual sweetness on the finish. Excellent.

750 ml bottle from the brewery with a date of 1/07/16. Aroma is a mixture of bread, straw, yeast and mild notes of citrus.

Flavor is mostly the same with the yeast being the focal point. Comes off as light dusty basement with a moderate about of pale grain. Mild carbonation level gives a soft mouthfeel that ends in a dry texture over the palate. Good amount of malt giving a larger body with some sweetness. Pretty easy to drink and easy going.

Light hay and light citrus. Pours hazy orange with decent head and lacing. Light crisp finish. Ok but not much here. Easy drinking. Tap at publick house.

Bottle shared at the Nov. 2015 Monticello Dairy tasting. Hazy lemon, thin fizzy off-white head, good retention. Aroma of yeast, doughy and bready malt, apples, spice. The taste is apples, yeast, spice, bready malt. Medium bodied, lingering spice.

Location: 750 ml bottle from the brewery, 8/14/15

Aroma: The aroma is spicy and peppery saison yeast with some underlying fruity notes
Appearance: It pours a hazy yellowish color with a bubbly white head and drippy lacing
Flavor: It tastes similar, spice forward, lots of yeast flavor, light, fruity hops playing second fiddle
Palate: The body is medium, its got a lively carbonation, and a mid-dry close
Overall Impression: This is a very solid saison. Not quite up to the level of their pale, but few beers are. Good, well-made, and fairly flavorful. That about sums it up.

Bottle. Pours a slightly hazy yellow color with a small white head. Has a fruity malty spicy yeasty weak citrus hoppy aroma. Fruity malty spicy yeasty bitter hoppy flavor. Has a fruity malty spicy yeasty bitter finish.
