This is a medium-bodied, off-dry mead, made with a cider-pressed apple blend that is predominantly McIntosh. It has a bursting tart apple flavor with a crisp finish. Green apple dominates the palate but subtle floral notes from the honey come through in the aroma and after taste. The acidity from the Macintosh apples makes this mead very food-friendly. It can be enjoyed after dinner on its own, or paired with pork, poultry or strong cheeses.

750 ml. Clear golden color. Flavor is sweet apple, honey base with a slight acid in the backend. Subtle crispness and mostly dry texture. The body is a tad thin but I like this more than the blueberry made from this maker.

Bottle sample at HoneyMaker, pours a clear blonde. Aroma brings out crisp apples, some champagne yeast, and a touch of fermented out honey. Flavour is more expressive on the apples than the honey, with crisp green apples, champagne yeast and barely a trace of residual sugar. Crisp and effervescent. Decent.

Sample at the tasting room. Clear pale yellow color with a minimal head and patchy legs on the glass. Aroma of apples and honey. Medium to full body with flavors of mildly tart apple and floral honey. The finish is fruity with an apple and slight spice aftertaste. Decent overall.

A pale cyser with aroma of green apples and honey, cloves, light astringency. In mouth, a nice tart green apple, bubbly mouthfeel, light clover honey, not bad. On tap at Farmhouse Tap and Grill, April 7, 2012.

On tap at the Farmhouse Tap and Grille Burlington VT. Pours a crystal clear golden amber color with a smattering of tiny bubbles that dissipate almost instantly. Smells of apples, honey, brown sugar, and a hint of sulfur. Taste is sweet with sugar, honey, and apples. Medium body with a semi sweet palette. Nice cyser, and definitely a contrast to the ipa’s I’d been drinking,
