Appearance is pale with hues of straw and aromas are sweet of candied orange and red apple. Through mixed fermentation and assertive dry-hopping comes a unique and complex balance of tart fruity esters, elderflower, and spice, tapering to a dry finish.

You don’t see the term "super saison" used much in North America, but here it is. Bottle from Legacy. It’s cloudy and pale, with a head that fluffs up and then falls back to a 2cm thick froth. The aroma has a complex mix of elderflower and other dried floral notes, lacto, hops (they use Belma)...a fair bit of sweet pale malts and yeastiness like a rustic French bread. Not picking up much brett yet. It’s a complex, refined aroma. On the palate, the florals show through strongly. There’s a lot of malt, a dash of alcohol and a modest, floral Belma bitterness. A slight yoghurty character hints at lacto and there’s just a tiny bit of brett starting to creep in. Refined, tasty strong saison today, this will evolve quite a bit over the coming months without a doubt, as the brett kicks in a bit.
Vintage bottle, served July 2025.
A bit dull. And it's got a sort of phenolic bit to the aroma. Comes across soft, and it's definitely got a bit of autolysis going on. So this is well past its prime.

Rating Sovereign Super Saison which may be different as ABV is 8.5%. 750 ml bottle. Bottled Sept 03/14. Pours a hazy amber with full head and a little sediment. Aromas of brett, sweaty socks, candied fruit, and toasted malts. Flavors of dried candied fruit, dried honey, elderberry/gooseberry, and lemon wax, with a bretty bitter finish. Will put a bottle down for a bit to see what happens.

2018-02-27, corked bottle, bottled Sept 03 2014, 3+ years ago, 8.5% ABV, 7-4-7-3-15=36
Stored horizontally, the cheap cork is wet on the tip and in perfect conditions. Golden color, hazy, with large frothy head, the result of an existing strong carbonation. The aroma is strong; Brett and cork are in evidence. Good body strength, with high carbonation; very strong Brett character, woody, corky and astringent; touch of bitter orange peel in the final.
Interisting aging experiment.
2015-11-11, draught at Bitter Tasting Room, Vancouver, 12 oz, 8.5% ABV, 7-5-8-4-16=40
Cloudy golden color with compact head. The aroma is mildly tart and funky; full bodied, quite smooth, with some residual sweetness; it has funky and astringent notes, some malt flavor, but most notably a very nice touch of sweet oranges; not very bitter.
Balanced, rich, excellent.
2014-06-03, draught at Alibi Room, Vancouver, as Super Saison, 9% ABV, 7-4-7-4-15=37
Cloudy golden color. The aroma is flowery, some elderflowers and orange blossom. Full bodied but quite smooth; strong flavor derivation from the yeast, spicy; not much Brett or Lacto; moderately sweet; it has some fruity traits, correct bitterness, a touch of bitter oranges and mild astringency in the final.
Very nice, comprehensive.

On tap at the Alibi Room for Camrapalooza 2014, pours a cloudy yellow with a small white head. Aroma brings out a wonderful mix of yeasts, including lacto and brett, along with lots of spiciness. Flavour is extremely complex, with bretty funk, spicy Belgian yeast, and bone dry crackery malt. Medium-to-high carbonation that is perfect for the beer. Quite complex and elegant. Another wonderful brett beer from Four Winds.
