Fermented for more than 18 months in isolation from the rest of the beers, The Dissident is a distinctive Oud Bruin, Flanders-style brown ale, with a fruity aroma and flavor, the first wild yeast beer made by the award-winning Deschutes Brewery. To give The Dissident its characteristic sour taste the brewery used a wild yeast strain called Brettanomyces (also known as Brett) during fermentation. Known throughout the wine world for creating earthy undertones found in many European wines, Brett is used in the beer fermentation process to create strong flavors typically associated with Belgian beers. Unlike English varieties that use traditional inoculated yeasts in the fermentation process, beers made with Brett take much longer to ferment and require additional barrel finishing time to balance the sour flavoring. In the Dissident’s case, this meant aging a portion of it in pinot and cabernet barrels for over 3 months. Another key flavor component comes from the Central Washington cherries that were added twelve months ago.

Bottle shared at the tropical Croydon tasting at Paul’s. 01/07/2015. Semi clear golden orange coloured pour with a thin white head. Aroma is complex, musty, tart apple, dirty nappy, acid and some varnish. Flavour is composed of sweet and sour, apricot, caramel, musty. Palate is medium bodied, highish carbonation. Interesting beer.

Bottle split at Scopesters on melt day, thanks to ??, 01/07/15. 2012 vintage. Hazed orange amber topped with a decent beige swirl. Nose is tarte red berry, fruit rinds, prunes, spice, wood must, toffee. Taste comprises dark fruit sourdom, wooded tones, spice, tarte berry, fruit balsam. Full bodied, fine carbonation, rising acidic bite in the close. Xolid Xour red/brown.

2010 bottle. Pours a cloudy copper with small white head that diminishes to nothing. Aroma is some funk and sour fruit. Thin mouthfeel with light sour fruit, cherry skin and light tartness in finish. Very good

Bottle from a trade. Dark red colour, thin layer of foam. Aroma of sour fruit, cherries, vinegar and red wine. Oak and fruit. Light sweet, tart finish. Very well balanced.

Bottle @ Odense Tasting January, 2015. 2010 Vintage. Trade with Hannont. Thanks. Pours ruby red with a off white head. Balsamic, puke and coconut. Tart and dry. Good cherries also. Mild almond. Quite in harmony. Tasty!

Draft pour at the Portland brew pub. Pours red with a quick fading fizz head. Sour fruit, wood, and wild yeast aroma as well as flavor. Wild yeast particularly stands out, though the sour fruit will linger for a while. Shocked at the ABV here. Drinks really easy, and the tartness isn’t too intense. Finishes a little wine like as well. Bonus points for being unique. This one isn’t like most sours. Great stuff.

Bottle 2010 Vintage [from trade with Scopey] shared with Countbeer. Hazy reddish color, full sized fairly quickly diminishing off-white head. Aroma is lightly sour and a lot of red fruits, mainly cherries and strawberries. Taste red fruits, strawberries, cherries, lightly sour, slightly yeast. Very balanced. Very nice!
