Fermented for more than 18 months in isolation from the rest of the beers, The Dissident is a distinctive Oud Bruin, Flanders-style brown ale, with a fruity aroma and flavor, the first wild yeast beer made by the award-winning Deschutes Brewery. To give The Dissident its characteristic sour taste the brewery used a wild yeast strain called Brettanomyces (also known as Brett) during fermentation. Known throughout the wine world for creating earthy undertones found in many European wines, Brett is used in the beer fermentation process to create strong flavors typically associated with Belgian beers. Unlike English varieties that use traditional inoculated yeasts in the fermentation process, beers made with Brett take much longer to ferment and require additional barrel finishing time to balance the sour flavoring. In the Dissident’s case, this meant aging a portion of it in pinot and cabernet barrels for over 3 months. Another key flavor component comes from the Central Washington cherries that were added twelve months ago.

Bottle - 2012 vintage. Pours hazy reddish hazel - really a weird neon candy orange actually, medium fizzy tan head that dissipates quickly leaving decent lacing on the glass. Aroma is hella oak, some basement funk, lemon, tart cherry. Flavor has a bit of initial sweetness, then dries out to light plus tartness and a light funk. Flavors of cherry, oak, basement must. Medium body, rich mouthfeel. After the first few sips and as it warms it gets very woody and a bit harsh; some floor cleaner notes coming through.

2008 and 2010 bottle courtesy of Levi, 2008- Hazy red-gray-orange. Gushing bottle. Massive sour vinegar, yeast, a little musky. A pretty nice, big Flanders Red. Has a nice amount of depth, some nice malt undertones. Brett forward 2010- A different creature than the 2008 for sure. I get more lactic tones. Deeper, richer malts, balance it out. Superior mouthfeel. Whereas the 2008 is a little dried out, this is smooth and easier on the palate. Still has a puckering sour touch, but it is better incorporated. Nice beer

Bottle shared at the epic sour sourpuss tasting thanks to Mrhangover. Pours hazy brown with a ring tan head. Aroma is funky, tart red fruit, caramel. In the palate raisins come out with big leather and vinous aspects. Flavour is moderate sweet and acidic. Full bodied with soft carbonation.

2008 version :A reddish copper ale with a thin mocha head. In aroma, sweet fruity malt with light acetic notes, apple skins, so-so. In mouth, a sweet fruity malt with apples, cloves, honey, tired and sad. Xmas Ottawa gathering Dec 13 2013.
