Fermented for more than 18 months in isolation from the rest of the beers, The Dissident is a distinctive Oud Bruin, Flanders-style brown ale, with a fruity aroma and flavor, the first wild yeast beer made by the award-winning Deschutes Brewery. To give The Dissident its characteristic sour taste the brewery used a wild yeast strain called Brettanomyces (also known as Brett) during fermentation. Known throughout the wine world for creating earthy undertones found in many European wines, Brett is used in the beer fermentation process to create strong flavors typically associated with Belgian beers. Unlike English varieties that use traditional inoculated yeasts in the fermentation process, beers made with Brett take much longer to ferment and require additional barrel finishing time to balance the sour flavoring. In the Dissident’s case, this meant aging a portion of it in pinot and cabernet barrels for over 3 months. Another key flavor component comes from the Central Washington cherries that were added twelve months ago.

2012 Bottle: Pours murky brown with a minimal head. Apple vinegar aroma. Taste is cherry, woody, slightly lactic. A little acidotic...fairly pronounced alcohol note.

On draft at the GABF 2013. Pours a clear copper with an off white head. Flavors of caramel and tart apple. Smooth tart finish.

Bottle. Musty vinegar and cherry malt aroma. Amber with small head. Surprisingly sweet cherry-apple malt initially with a musty dry vinegar finish. Nice.

Bottle 2012. Sour cherry, funky lactic, vinous woody aroma. Hazy rusty red with a small yellowed ivory head. Sour cherry, funky lactic, spicy oaky, vinous, boozy flavor. Medium body, moderate to lively carbonation. Seemed slightly rough around the edges, but I suspect that would soften up with a little more aging.

Bottle - Vintage 2012 -Toffee, brown sugar, plums and alcohol. Clear amber with a thin head. Incredibly smooth for a sour is the first thing you notice. So well balanced with dark fruits, brown sugar and some alcohol heat but appropriate and not out of place. I can’t wait to put some age on these and see what happens.

#1900 Rating. Thx! to the one only Adamjackson for sharing this one @ ‘The Adam Jackson Tasting’. 2010 Vintage. 65 cl. bottle sampled. Best Before After 11/01/2011 – that’s a new one. Apparently fresh this stuff is quite appalling according to Adam. Lovely label. This is a Flemish red – really? I thought this was a sour barley wine, there is nothing Flemish about this beer for me but than again I am not from the States so… Anyway this pours a lightly reddish bright orange, interesting, some white head only on the sides. Nose is fermenting jam fruits, sweet with some jam, reddish fruits, toffee, chewing gum, touch USA brett sourness,… Taste is sour, rotting plastic fruits, jam fruits, jam, caramel, toffee, chewing gum, fermenting malts, touch mould, rotting cherries and grains, all kinds of odd flavours going on, maybe this is still to young. Body is USA heavy for a sour, full, bit caramel like. Quite an odd one, nice for the tasting glass I got, would have scored this sub 3 probably if I had to drink a whole bottle of this. I can just see the odd off-flavours getting a bit to much for me.

Little cloudy amber beer, small irregular off-white head, unstable, non adhesive. Aroma: fruity, peaches, gum drops, bit dusty, sourish, leather. MF: ok carbon, medium body. Taste: a bit old, honey, fruity, some jam, sugary and sweet touch. Aftertaste: sourish, some vinegar, little fruity, leathery, a bit off, mildew, some bubble gum, bitter ending. Not impressed, alas.

2010 Vintage. Aroma is tart cherry and oak with some sherry and oxidation notes. The cherry has a slight medicinal quality but not too bad. The oak is fairly prevalent as are the cherries. The malt has some caramel notes but light. Pours a nice amber, ruby color with a tan head that recedes fairly quickly. Very slight lacing with small legs. Flavor has quite a but of cherry and oak with some light acetic character. Finish is a bit medicinal with lingering oak and cherry. Bitterness is moderate and alcohol is noticeable in the finish. Medium bodied with medium low carbonation. Moderately high alcohol warmth and low astringency. Overall this beer is alright but not amazing. It has a lot of heat and the cherry notes have a touch of a medicinal character. ---Rated via Beer Buddy for iPhone
