Fermented for more than 18 months in isolation from the rest of the beers, The Dissident is a distinctive Oud Bruin, Flanders-style brown ale, with a fruity aroma and flavor, the first wild yeast beer made by the award-winning Deschutes Brewery. To give The Dissident its characteristic sour taste the brewery used a wild yeast strain called Brettanomyces (also known as Brett) during fermentation. Known throughout the wine world for creating earthy undertones found in many European wines, Brett is used in the beer fermentation process to create strong flavors typically associated with Belgian beers. Unlike English varieties that use traditional inoculated yeasts in the fermentation process, beers made with Brett take much longer to ferment and require additional barrel finishing time to balance the sour flavoring. In the Dissident’s case, this meant aging a portion of it in pinot and cabernet barrels for over 3 months. Another key flavor component comes from the Central Washington cherries that were added twelve months ago.

2012 Reserve, best after 8/20/13, 11.4% ABV
Cloudy amber color with red hue; small head. The aroma is vinous and woody, with vanilla, reminiscent of some New World heavily oaked red wines. Full bodied, with round mouthfeel; quite good malt flavor, also one of the sweetest Sours I can remember; the acidity is moderate, while the astringency is a bit higher; it has a woody and yeasty character, and nice fruitiness (cherries and red wine); correct bitterness, with some alcohol in evidence in the final.
Very good, but some trace of baker’s yeast makes it imperfect.

Thanks Long for sending me 2 of the 2012 and to Dak for sending me 1 2010 vintage. Enjoyed a 2012 at 60 degrees F in a snifter on my GF’s Birthday.
A - Produced a hint of fizz and faded fast. Looks completely still, Murky reddish brown.
S - Grape skins, cider vinegar, band-aid and plastic. Tart nose with a hint of cherries but not dominating.
T - Sort of boozy up front, tart fresh cherries. it’s not a ripe cherry taste...very earthy and hard fresh cherries. Hard to explain but I should let this age longer. Tart at the finish and sort of a subdued sweetness. A hint of vinegar.
M - Light body, very slick texture, low carbonation
O - This is a good beer..slightly too boozy and the cherry taste is too ripe.

650 ml bottle. Pours a somewhat clear red/brown with light head. Aroma of oak and cherries with sour vinous notes. Nice mellow - not too sour. Flavors of malt, bitter cherries, sweet rose wine, and wine gum. Lots of carbonation, Interesting.

65 cl bottle vintage 2008 (9%) at Toronado, San Francisco
Aroma is rather tart and sour with redcurrants. Very foamy palate. Flavour is sour and tart with redcurrants and some sorbus. A sweet feeling in the background that becomes too sweet and sticky after some sips. Hides the ABV well. Could probably improve with more aging.

22 oz. bottle, split courtesy of uhlan (thanks Gerry!), pours a beautiful ruby red with a small beige head. Aroma is uber-complex, with sour cherries, sweet candied sugar, some candy floss and light acidity. The flavour reveals more of the acidity, but also dominated by sour cherries, medium sweetness, some amaretto liqueur, and quite a lot of booze, despite this having been a 2-year old bottle. Couldn't drink a lot of this, but in smaller samples, this is exquisite. Very complex and refined.

Draft at Beer Revolution. Flat cloudy amber color. Aroma of malty summer fruits. Taste is boozy lemon, grapefruit. Very nice.

2010 vintage from cbkschbert. Pours clear light brown color with tan head. Aromas of sour cherries, oak and brett. Fruity and sour flavor, bretty and earthy with some oak. Meduim body with average carbonation. Very nice. Thanks Craig.

Fall 2011 Ratebeer gathering. +++ Sampled from a 22 oz brown bottle this beer poured a hazy bright red-orange color with a small tan head that faded quickly and left no lacing. The aroma was tart and sour caramel and vinegar. The flavor was tart with notes of tea, cherry, berry and must. Medium body. Complex but odd.

2008 bottle. Nice lactic, acetic nose, cherry, light chocolate. Oh-so-light funk. Deep red, cloudy, with lace. Dry, dusty flavor, cherry, clean, though dirty. Low sweetness. Very dry and slightly tart. An interesting dry take on the style. Like it.
