Fermented for more than 18 months in isolation from the rest of the beers, The Dissident is a distinctive Oud Bruin, Flanders-style brown ale, with a fruity aroma and flavor, the first wild yeast beer made by the award-winning Deschutes Brewery. To give The Dissident its characteristic sour taste the brewery used a wild yeast strain called Brettanomyces (also known as Brett) during fermentation. Known throughout the wine world for creating earthy undertones found in many European wines, Brett is used in the beer fermentation process to create strong flavors typically associated with Belgian beers. Unlike English varieties that use traditional inoculated yeasts in the fermentation process, beers made with Brett take much longer to ferment and require additional barrel finishing time to balance the sour flavoring. In the Dissident’s case, this meant aging a portion of it in pinot and cabernet barrels for over 3 months. Another key flavor component comes from the Central Washington cherries that were added twelve months ago.

Bottle (from GBBF 2011) at Leighton’s Aug 11 tasting. It pours red-orange, with a thin off-white head. The nose is sour cherry, cranberry, raspberry, blueberry, malt vinegar and lactic acid. The taste is sweeter than expected: blackcurrant, glazier cherry, blueberry, light malt vinegar, almond, Playdough and some alcohol warmth. Medium body, fine carbonation and light tartness. Decent, but I wish it had a bigger sour kick.

Bottle at a tasting, thanks to Paul. Pours clear amber with a fine, white head. Has a pretty dynamic aroma, featuring tart berries, caramel, toast, grapes, wood. Very sweet flavor with some detectable alcohol, tart berries, slight funk. Full bodied with fine to average carbonation. Warm finish, medium tartness, booze, caramel, berries, sugar, wood. Very good stuff.

Bottle from GBBF 2011 drunk at home. Wow that is a sour aroma. Some obvious alcohol on the finish. Some funk on the aroma. Some cherry fruit as well. Rounded cherry ripple ice cream flavour with some biscuit. A bit like a sour cherry cheesecake to be honest. Just a touch boozy to be honest. Some cherry liquer style flavour on the finish. It’s an odd thing. Is it a barley wine with some fruit or is it a sour beer with too much sugar and alcohol? Tasty and makes me drunk. But the alcohol is just too obvious on the finish.

2010 bottle at SAVOR. Poured an amber color with a small, almost non-existent head. Aroma was sour cherries, fruit notes, alcohol pretty well masked. A huge fan here of this sour wild ale, but probably not for everyone. This one was superb.

Fiery orange-red body, thin clumping light beige head. Active carbonation. Sour nose with tart fruit and pineapple. Puckering sour, funky body with pineapple and wheat, in addition to brown sugar and toast. Also some wet socks funk, though not predominant. Quite good.

Clear red brown beer. Crisp palate. Sour brown beer. Nicely balanced. Not overly sour with it’s sweetening alcohol in the finish. 3.3

Tropical Croydonia Bottleshare. Hazy amber beer, no head. Palate is light and semi dry with a very fine crispness. Light malt cream. Savoury flavours in to a light vinegary sourness. Jammy fruits which are overtaken by mild geuezey wet wood. Light savoury finish. Not bad at all.

2010 edition Draught.. Poured clear red. Looked like a glass of wine. Aroma is cherries and oak, lots of cherries and oak. Sour cherry flavour with more oak, Lots of alcohol flavour at all times. Unpleasant finish. At times, I couldn’t decide if this is a bad beer, or a good cherry wine. Sip it,

8/22/13 rating: Red wax-dipped bomber, 2012 vintage, stamped "Best After 8/20/13." Pours mostly a clear pretty amber with a medium beige head with good retention. Aroma is strong in vinegar, dark fruit (cherries, definitely--the flesh and the pits), molasses, wood, dusty basements, barnyard funk, caramel, booze, raisins. Taste is mostly sour (8/10 on sour scale) with a lingering dry bitter/savory finish; alcohol is strong but not overbearing. Mouthfeel is creamy, body full, carbonation somewhat soft. Boy, were they right when they said to wait on this one. The first time I rated it, I had a fresh bottle and it was pretty horrible. What an improvement a year in the cellar does to this! 9,4,8,5,17=4.3

Initial 12/4/10 rating: Bomber poured into snifter. 2010 vintage. This bottle reads 10.5% ABV. Pours orangeish-brown with a medium head that collapses fairly quick, leaving a collar of foam full of big bubbles. Aroma is flowery, pungent-funky, molasses, tart fruit (cherries? apples?), brussell sprouts. Taste is sweet and sour (quite unlike the tart explosion found in New Belgium’s La Folie, which I drank before this) with an alcoholic bite. Flavor is a bit wine-like. I taste raisins. Harsh. Carbonation is medium-high, mouthfeel is both creamy and oily, body is full, finish is looooooong. Hard to drink. 7,3,4,4,8=2.6
