Bottle thanks to Matt. Pours hazy straw, medium white head, dissipates fairly quickly, decent lacing. Aroma is straw, lemon, dust, Brett. Flavor is dry, light tart, lemony and lightly funky Really clean and enjoyable. Delicate. Light body. Tasty beer.

Batch 1 bottle (mid-late 2015), drunk 12/6/15.
Huge, rocky, bottle conditioned/unfiltered white head is very well retained. Sparkling bronze-golden liquid shows a medium-high to high clarity.
Soft, gentle lactic acid in the nose combines with mild brett, delicate honey and fresh Spring flowers. Soft, earthy funk builds interest but never interrupts the brightness of the citrus and you’re left with a floral, but not too much so, nose that is infinitely sniffable, free of alcohol and flaw (and no resinous hops!).
The flavor is much more given over to the lactic acid, which arrives on the palate midway through and gently builds up acidity. It never gets too sour, however, and there’s a wonderful complexity of biscuits, crackers, pepper and honey stemming from the rye, wheat and barley. Wonderful, tight carbonation and well-extracted yet well-attenuated malts provide a soft texture. Dry, tart yet not overdone on the acids and quite complex. Definitely agree that this is their best one yet.

Pours light yellow into a tulip. Bright white head with good retention recedes to coat surface. Lemon and brett aromas. Sharp with lemon zest, lemon pith and lemon juices upfront turning to a nice, dry aspirin and marshmallow band aid finish.
