Huge, towering butter-yellow head, slowly depositing lace over metallic clear copper beer with some verdigris sheen. Fruity aromas upon opening, dry hop, with the unmistakable (blue) cheesy notes of Sorachi Ace, here doubled with a salty hint as from fresh shrimp. Bitter, but preceded by a very toasted, near scorched caramelly flavour. The S.A. mixes in with running cheese notes. Beer is really young (*), and features some meaty yeastesters. After serious warming up, loads of liquorice. Medium to well-bodied, obvious alcoholwarming, and an oily slickness. Ah, I’ve already encountered the exception confirming the JPP rule concering Sorachi Ace. This one again firms my conviction that SA belongs in dark, strong, melanoidiny beers. (*) Retry needed
