750mL bottle, batch 1 vol. 3, drunk 6/11/16.
Large white head tops a fairly hazy, waxen-yellow-golden body. Moderately strong retention.
Tons of wheat, moderately floral brett and a good deal of biscuit, honey and light dough, also allow black pepper and soft, strawberry-apple-like Belgian esters. Not too oaky, though there is certainly some of it felt. I like the large amount of malt/wheat/grain that is apparent in the nose. The lemony-tartness and oak do depart from a traditional saison, but it still has a lot more traditional character than most contemporary saisons. No alcohol or flaw.
Very big body for a saison, though it’s not sweet or bready. I suppose more correctly, I should say very full texture, as it’s full of wheat and tannin, quite chewy and "thick" though not with any negative connotations that may imply. Carbonation is mostly tight and ample, with lemon, floral brett notes and moderate acidity keeping the finish quite dry. Black pepper and light plaster-like characteristics are highly pleasing. Will certainly try more from these guys.

Bottle - pours yellow white head lots of foam - Nose/taste of brett, lemon, funk, oak, orange peel and saison yeast - medium body.
