New England-Style Double IPA w/ Mosaic Hops brewed with Imperial Organic Yeast

Two years ago, we brewed the first batch of Special Sauce, our take on the New England-Style Double IPA, which was a style that didn’t exist in the Chicagoland market at that time. The first batch had Mosaic hops. Since then, we have done over 12 versions of Sauce each with a different hop. It was finally time to go back to the original. So we brought in the crew from Imperial Yeast to brew this with us as they were the ones who helped me develop the special yeast blend used in this beer.

16oz. I don't know what it is about this beer, but I dont like it. Hairspray phenols. Dextrose. Nothing I want or enjoy from the style. Crap hop tone. Gas Station Haze.

Lots of mango, pours hazy yellow with good head and lacing. Tangerine maybe. Lots of sweet fruit. Sweet finish. Tap at Snally.

Can split at the first Canary Wharf / Westferry Circus tasting in 2.25 years ... who knew back then ... thanks to the Wingmane, 09/06/22. Lightly hazed golden orange with a decent off white crown. Nose is juicy citric flesh, pine resin, mango, melon, pine nip. Taste comprises orange pith, grapefruit, pine resin, grass, mixed tropical fruits, raw pineapple, mango, lychee, stoned fruits. Medium bodied, fine carbonation, semi drying close spliced with juicy hop bitterness allied to a balanced rising boost. Solid hop shizzle.

Can shared in Canary Wharf - cheers to Dave. Pours lightly unclear yellow-gold with a creamy, white topping. Moderately sweet, some nice peach, melon, tangerine, ow rindy bitterness. Medium bodied with fine to average carbonation. Nice juicy citrus finish, a little pale bread, nice tangerine and peach. Some boozy warmth. Sound.

Can shared at Welcome back to DS Tasting. Thanks to Wingman for this one. A light hazed golden orange coloured pour with a lasting off white head. Aroma is nice dank, waxy citrus, orange, mango, juicy opal fruits, Flavour iscomposed of semi sweet, juicy fruits, mango, tangerines, mellow dank, mixed mixed tropical fruits, pithy finish. Palate is semi sweet, frothy carbonation, resinous hop. Really nice.

From a 750 bottle. Mellow faded fruity citrus hop aromas and flavors. Smooth light malt body. Some tropical fruit hop flavors.

Sampled from the tap at GTMW 2016. Pours a cloudy peach gold with a white head that dissipates to the edges. Aroma has notes of perfumey pine with grass and a bitter bite. Flavor has notes of spruce and pine with light grains and grass underlying.
