Brewing with spelt is not a new American tradition. Chocolate malted spelt from Germany (not actual chocolate) contribues a nuttiness to complement the roast and offer depth in place of additional bitterness. Think smooth chocolate, coffee and freshly shelled nuts.

Bottle at the April Fools Day DC Ratebeer tasting. Poured a dark amber, ruby colored beer with a small tan head. Aroma had cocolate notes. Roasted malts, chocolate, coffee. Light earthy hop notes.

I feel like this is underrated like Nasc second album. Great roast and a strong grain aroma. Black pour. Bittersweet finish. Some caramel.

Bottle at the RB DC gathering on April Foolโs Day 2017. Pours a cloudy mahogany with a tan head. Aroma of chocolate. Flavors of milk chocolate and coffee. Mild roast finish.

Dark/milk chocolate with good ruby-magenta highlights. Light tan head is medium-sized and shows medium to low retention.
Rich chocolate and coffee notes in the nose show vanilla, earth, black pepper and strong biscuit. No alcohol or flaw, but very low on the maltiness. Thereโs some exposed astringency and light lactic character which isnt off-putting by any means, but could use some richer malt tones to balance it.
Dry in the flavor with cocoa powder, roasty coffee and black pepper. No sweetness whatsoever, but a good lactic character and strong char. Earthy, crunchy roast dominates but the bitterness isnt overbearing. I love the wateriness and despite the lack of malt sweetness, itโs somehow very softly malted in the texture. Interesting.

500 ml bottle shared by ClarkVV. Very deep brown color, thin lasting white head on top. Aroma of charred barley, thick melted chocolate bar, and mild roast. The flavor is the same barley, thicker chocolate, and mild roast. English ale yeast or American yeast presence. The body is very full for the style. Very bone dry texture. This is really higher end for the style.

Poured from bottle thanks ClarkVV dark cola pour with a cocoa head. Aromas of dark chocolate roasted malt and spent coffee. Taste is dark fruit medium thin body chocolate earthy notes.
