Bottle drunk 12/1/17.
Lightly hazy, blonde-golden body topped by a medium-sized, white head showing modest retention.
Earth, mineral, light apple, bread and a touch of light tropical fruit, even, with spicy, peppery phenols and a long oak finish. No alcohol, sharp sourness or flaw.
Dry and yet malty, with lots of mineral, lemon and yogurt and a growing tropical fruit character, mixing with apple esters and honey-like malts. Really quite charming with great attenuation, no off-flavors, no heavy sourness and topped off by tight carbonation. Everyone was quite surprised to learn this was not spontaneously fermented. Lots of cheesey funk and great wood character growing stronger as it warms and breathes.
