Dark Sour Ale

Changeling is an enchanting blend of dark sour ales aged in whiskey and wine barrels that were inoculated with Brettanomyces and lactobacillus. It pours a deep ruby color with touches of gold at the edges of the glass. Leading with plum and toasty malt, the flavor transmutes into a soft tartness, with notes of earthy, funky Brett and a touch of lingering caramel to create a delicate balance.

750 ml bottle into tulip glass, bottled on 2/3/2017. Pours slightly hazy deep ruby red/light copper/brown color with a 1-2 finger fairly dense and fluffy khaki head with good retention, that reduces to a small cap that lingers. Light spotty lacing clings around the glass. Aromas of big tart/sour cherry, raisin, plum, prune, fig, date, berries, lemon, green apple, red grape, caramel, brown sugar, hay, straw, pepper, brown bread, and toasted oak; with lighter notes of vanilla, bourbon, cocoa, coffee, toffee, nuttiness, leather, musty funk, red wine vinegar, and yeast/oak/toasted earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, dark/bready malt, and oak barrel notes; with great strength. Taste of huge tart/sour cherry, raisin, plum, prune, fig, date, berries, lemon, green apple, red grape, caramel, brown sugar, hay, straw, pepper, brown bread, and toasted oak; with lighter notes of vanilla, bourbon, cocoa, coffee, toffee, nuttiness, leather, musty funk, red wine vinegar, and yeast/oak/toasted earthiness. Light-moderate fruity/lactic tartness and yeast/oak spiciness on the finish. Lingering notes of tart/sour cherry, dark fruits, berries, lemon, green apple, red grape, caramel, brown sugar, hay, straw, pepper, brown bread, toasted oak, leather, musty funk, light cocoa/vinegar, and yeast/oak/toasted earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/acidic yeast, dark/bready malt, and oak barrel flavors; with an awesome malt/tart/spiciness balance, and zero puckering flavors after the finish. Light-moderate dryness from tart/spiciness and carbonation, increasing through the glass. Medium-high carbonation and medium body; with a very smooth, moderately crisp/grainy/acidic, and lightly sticky/chalky/tannic balanced mouthfeel that is awesome. Zero warming alcohol for 7.3%. Overall this is an amazing blended dark sour/wild ale! All around incredible complexity, robustness, and balance of fruity/funky/acidic yeast, dark/bready malt, and oak barrel flavors; very smooth, crisp, and easy to drink with the balanced tart/lactic/spicy finish. Phenomenal Brett and Lacto complexity in great balance with the blend of base beers. Great bourbon/wine barrel presence. A highly delicious offering. Would love to age another and see how it develops in a year or two.

Pours deep, dark mahogany into a tulip. Tan head with medium retention recedes to skim surface. Cherry and vanilla aromas. Tart chocolate-covered cherry and mild whiskey upfront turning to bitter pits in the lasting finish.
