SPON Still is 100% spontaneously fermented beer inspired by authentic Belgian Lambic.

Our goal is to follow the method of making Lambic, but to do so outside the traditional region with our own native ingredients and microflora, so as to create something unique to our own time, place, and people. It’s fairly common for Lambic to be unblended and bottled still. That was our inspiration for SPON Still — unblended, still Lambic.

We did a turbid mash with well water, TX malted barley, and TX raw wheat, long boiled with aged hops, chilled overnight in our coolship, then 100% spontaneously fermented in oak barrels. This year's SPON Still came from a single barrel containing FOUR YEAR OLD stock from our 2016 coolship season. For SPON Still, we intentionally chose not to referment the beer after packaging and present it still. Our inspiration comes from authentic Lambic served still.

For our 2020 release, we decided to have some fun and package it in 1.5L bag in a box!

Poured from 750mL bottle (2016 and 2017 side by side) @ July Black Xmas. 2016 preferred over 2017. 2017 had wood and dry tartness with a touch of oxidation (3.4); 2016 had a mild tartness with a better overall balance (3.7). Rating is for 2016.

(From box) Vinegar, apple, malt and hay aroma. Amber with no head. Minimally sweet apple, malt, moderately sour vinegar, and mildly bitter hay flavor. Nice body.

2018 bottle. Unclear amber color with no head. Aroma is cheesy, overripe red apples, barn. Taste is red apples, earthy, mineraly, mild aceto. Oily mouthfeel, flat. This is quite enjoyable at this point, but I've had much better flat Lambieks.

Clear warm golden colour, white dissipating head. Aroma of cookies, green pepper, cheese. Sweet flavour, fusals, light lemon. Light tart finish, wood, higher alcohols. Bit of a mess, really. I rather like Jester King and was expecting more of this flat lambic style beer. Maybe it needs more time.
