Our third collaborative effort with the wonderful people of Dandy Brewing in Calgary, we went in a slightly different direction than in the past. Inspired largely by what Dandy has been doing with some of their Non Enzymatic Mash (NEM) Pale Ales and Lagers, we chose to utilize this concept to brew a table strength NEM Stout. Brewed with lactose and wildflower honey, we mashed and sparged this beer cold (as opposed to hot in traditionally brewed beers), extracting an entirely different flavour and protein profile than any stout we've brewed before. The unique mashing process allowed us to pull a huge amount of flavour from the grain, and still keep the sugar extraction low which gives this beer smooth notes of dutch cocoa and espresso, with an absurdly silky full body making this 4% Stout a truly satisfying and sessionable option for the season!

Dark brown, pretty straightforward coffee stout, with a bit of nuttiness. Some fusely off notes...maybe it’s something else but there’s just something not working

Draught at The Magnet, Vancouver
Dark brown to black colour. Aroma of cream, chocolate, touch of coffee. Mild body, but the mouthfeel is smooth; moderate chocolate flavour, with some lactose, somehow suggesting a cold cappuccino.
Graceful.

Poured from the tap. Dark brown with beige head. Lots of roast coffee upfront, mild sweet chocolate, with very light body. Ultimately too light, too sessionable, lacks the flavour follow through to have a second.

On tap at Twin Sails, pours a deep dark brown with a small tan head. Aroma brings out intense coffee upfront, with light cocoa and some roast. Flavour is a little less intense, with cold brew coffee, some roast, and chocolatey sweetness. Very pleasant stuff. Good one.

Cocoa and toast. Jet brown with a small brown head. Toast and roast. Just OK.
