Brewed to pair yeast notes with hoppy ones. Sorachi Ace, used in dry hopping this beer, gives herbal and sherbet-y aromas to brighten the subtle bready malt qualities. Saison yeast gives orange peel and dried fruit aroma, with dry lingering finish.

Bottle, from The Highland Bottle Shop, on the train from Thurso to Inverness 20/10/13. Hazed orange/yellow with a good sized light beige head. Nose is lemon rind, straw, grass, orange sherbet, yeast esters, touch of spice. Taste comprises orange pith, tangy peach, herbal notes, lemon rind, earthy, straw. Medium bodied, fine carbonation, dry grassy fruit finale. Decent saison.

50cl bottle, batch #10, bb May 2015. Hazy golden, thick, lasting white head, high carbonation. Aroma is yeasty, peppery, citrusy and with some perfumy notes. Flavor has citrus, hops, yeast, spices, mostly pepper. Finishes dry and floral with coriander lingering. Decent saison, high drinkability. Another good brew from this brewery

Draught @ The Rover. Pours slightly hazy golden with a big frothy and creamy white head that slowly dissipates while leaving some soapy looking lacing on the glass. Smell is tiny sour, tiny spicy and phenolic with crackers, lemon juice, white pepper corns, hay, cloves, unripe pears, green apples, unripe plums, dry soil, lemon zest and hints of apricots and lemony soap. Taste is slightly sour, tiny spicy and phenolic with crackers, lemon juice, green grapes, baked pears, cloves, coriander, white pepper corns, dry soil, hay, apple skins, lemon zest, unripe plums, orange zest and hints if schampo. Mouthfeel is crisp, dry, slightly tart, tiny spicy astringent and light bodied. Finish is sour and spicy with crackers, lemon juice, cloves, dry soil, wood, unripe pears, green apples, lemon zest, grape skins, coriander and schampo. Phenolic without getting metallic. Tasty without being spectacular.

Bottle at The Bottle Shop Canterbury. Clear gold amber lasting off white head. Nice funky aroma. Aroma is better than the body. Some funk. Some lemon. Starts well then fades

Hazy amber beer, little white head. Palate is dry and airy. Bitterish yeast. Mild minerals. Mild tangy citrus. Dry finish. Found this quite one dimensional and yeasty. A rare disappointment from this new brewery.
