Feurre (Vol. 2) is the second iteration in a series of culinary-inspired saisons. The idea with Feurre was to strike a balance between complimentary flavours, acidity, and the classic esters and phenols of our house saison culture. Volume 2 was inspired by a favourite thai dish of ours.

Feurre was brewed with barley, wheat malt, spelt, and raw wheat. During the boil, we added thai basil, lime leaf, lemongrass and fresh ginger. Feurre was fermented in stainless with a mixed culture of lactobacillus and a phenolic-forward saison strain.

Lots of ginger on the nose, touch of brett, lemongrass. Tart, nice lemongrass and ginger character. Refreshing. I like the balance on this.

Taster. Appearance: hazy golden with almost no head. Aroma: lime and some ginger. Taste: along the same lines with some malty notes. Overall: ok.

Ginger and lemon grass. Clearish gold with a decent white head. Ginger and lemon grass with a surprising light refreshing finish.
