Hibiscus Sour
With a complex acidity and bursting with fermentation-driven flavour, Flower Market is our mixed-fermentation (no kettle sours here!) golden sour ale with hibiscus. We brewed this beer to show off our sour base while showcasing the citrus and cranberry notes of the hibiscus without either component overpowering the other. We feel the hibiscus adds a great festive flavour and colour for the holiday season while still being bright and refreshing enough to almost trick you into ditching the ski jacket.
The name Flower Market is a nod to the “tulip mania” in the golden age of the Dutch Republic, a period which not only contained some of the very first examples of futures markets and speculative bubbles, but represents earlier times when hops were only one of the many botanicals brewers used to flavour beer. Flowers, roots, and herbs represent a whole world of flavours and colours that are sometimes neglected by modern brewers. Hibiscus is a great introduction to that world with its incredible colour, dark fruit flavours, and aroma.
This beer base is co-fermented by our farmhouse style mixed culture of saccharomyces, two of our favourite brettanomyces strains, and lactic acid bacteria. We complimented that with a light dry hop of bramling cross to back up the gorgeous hibiscus flowers. The first of the sours we plan to release, we hope you enjoy this beer and the many more to come!

Poured from the tap. Clear reddish orange with small white head. Mild hibiscus, some light tart berry notes. Decent.

Can thanks to Ferris. Pours a hazy ruby with small off white head that lasts. The aroma is hibiscus, beet, earth. Slick body, hibiscus, cherry, beet, light acidity, very good.

500mL bottle, pours a cloudy amber, pinkish orange with a small white head. Aroma brings out gentle hibiscus upfront, with gentle tartness, and a little funk. Flavour is along the same lines, with hibiscus and a touch of funk. Gentle and floral, but not very deep. Meh.

Light purplish colour, bit of haze. This has lots of fruity, berryish aromas. Light body, again light fruity berryish taste. Solid balance on this.
