Rye Saison

With a seasonally appropriate warm and rustic rye flavour, this is our ode to traditional belgian style farmhouse brewing. Based on a classic saison, our twist is that we dose the beer with brettanomyces yeast strains on bottling day. This beer then undergoes a metamorphosis with the new yeast protecting the existing hop flavours while it adds its own wild and rustic expression over time. A reference to the final stage of metamorphosis in butterflies, the name “Imaginal Phase” suits this natural, evolving beer perfectly.

With a grain bill of malted barley, lots of unmalted rye and a touch of unmalted oats it has plenty of body despite finishing very dry. We kettle-hopped generously with Styrian Goldings and lightly dry-hopped with a carefully selected blend of Czech Saaz, German Tettnanger, and New Zealand Motueka. This combination brings out the best of the spicy and herbal flavours of old world hops.

[6.2% ABV] 473mL can. Pours clear gold with white head. Aroma is very funky with some spicy earthy notes. Flavour is a bit more tame, mainly spicy rye and dried grass. The rye overpowers the saison funkiness. Moderate carbonation. It's okay.

Poured from the tap. Hazed gold with small white head. Lemon, funk, floral and soapy, a bit harsh.

Pours with huge yeasty foam on a medium gold body, okay visible carbonation. Aroma is coriander and orange zest with just a touch of wild yeast and chunky cereal, working well. Taste is mellow cereal and honey, chewy but the funkiness falls back too fast and it ends smooth but not sharp which is a shame. This could have been rough and bold but instead it ends timid.

Cloudy blond colour. Strong spicy aroma and flavour, the mouthfeel is a bit chalky, it's also a bit yeasty. Ok.; a bit dirty

Light funk and lemon. Cloudy yellow with a decent white head. Lemon and a pleasant funk. Quite solid.

Cloudy, blonde. Thin head. On the nose, has some brett, some pedio, soft pale malts. On the palate, the rye comes through. There's some mellow phenols, there's a touch of brett. Soft malts. It's decent, probably not as developed as I'd like, like it feels like a beer brewed while still feeling out the kit, but still, promising.

500mL bottle, pours a cloudy yellowish blonde with a small white head. Aroma brings out a wonderful funky character, with farmhouse yeast character, and some earthy spiciness. Flavour is along the same lines, with intense farmhouse funk, some spicy rye, and farmhouse notes. Bright, funky and wonderfully complex. Really great.
