Biere de coupage is a historical technique in the Belgian farmhouse of blending smaller amounts of old sour beer into larger bartches of fresh beer, either to add interest to the young beer, or to find a use for a barrel of beer too sour to drink on its own. For us, the technique presented an opportunity to make (and drink) a beer...here a blend dry-hopped with Saaz, Sterling and Perle - that one can truly crush and/or consider.

Old rating - A 500ml bottle collected from the brewery in the summer. Pours a light amber colour with a white head. Aromas of cereal & flora. Tastes of sourness, spice, tart & flora. Crisp dry finish. Very easy to drink. Outstanding.

500ml bottle. Pours a hazy pale yellow with a small, foamy, short lived, white head that laces. Aroma of funky Brett, oak, peach, pineapple, lemon and floral hops. Sweet fruity flavour of grainy malt, lemon, pineapple, white grape, funky Brett, oak, floral hops and a hint of black pepper in a dry, tart, acidic finish. Light body with a watery texture and average carbonation. Tasty and easy to drink. Nice complexity.

Pale blond with thin head. Aroma has light barnyard funk. Flavour has delicate high notes of sharpness and funk.

500ml bottle at Erik's. Pours a hazy blonde with a white head. Aroma is quite pleasant with funky, light, and lemony notes. Taste is very mild and smooth along the same line. Almost flat, but very drinkable.

Bottle - Creamy, Barrel and funk. Cloudy yellow with a decent white head. Soure, funk and lemon with some feet. Funky.

500mL bottle, pours a cloudy golden with a small white head. Aroma brings out lots of barrel, some wood, wild yeast, and some dry hopping. Flavour is along the same lines, with light wood, wild yeast, and a bit of earthy notes. Woody and wild, but particularly deep. Decent.

Hazy, blonde. Thin head. There's a light brett note, a bit of dusty yeast, with a light fruity, berryish note. Has a nice, mellow barrel character, lots of brett, fairly dry, and this has a lot of complexity. Nice off-dry character.
