Reaching back across the millenia, we've recreated our version of an ancient ale that is fermented without ever being boiled. This Scandinavian-inspired farmhouse raw ale combines the heritage of our brewery's "family" by infusing West Coast red cedar from the workshop of local Coast Salish artist, Chris Paul.

A primary Brettanomyces fermentation, merged with the benefeits of refermentation in the bottle, results in a deliciously light, crisp and complex beer that encapsulates our Elemental Series commitment to experimentation and innovation.

On tap. 5.8% pours a hazy amber with light head. Aromas of soapy berries and wheaty malts. Flavors of lemon wax, more soapy berries, soft wheat and odd herbal notes.

Tasting at SF
Cloudy blond color. Smells of soap and vegetables (steamed fennel, celery…). Dry and earthy, some harshness from the yeast, terribly spicy, vegetable. Smooth carbonation.
Undrinkable.

750ml bottle shared at Brian’s office. Pours a hazy pale golden with a white head. Aroma is bretts, red cedar, and grassy. Similar taste, very grassy and bitter. Strange. Meh.

Cloudy, yellow. Bubbly head. Has a pedio aroma, with just a touch of brett. On the palate, light brett, some lemony notes. The pale malts show a touch of sweetness. It’s decent, but I’m not sure this comes together all that well. Just a bunch of decent elements, but that’s it.
