Second in the Bois Sauvage series, released July 2017. Yellow ink on the label. Our team’s barrel aging efforts have turned towards blending. The solera process, as it is known, allows for a mixture of vintages to come together in one beautiful mélange. For this, our first blend, several barrels were chosen for their tartness and fruity qualities and the result is a mineral, dry, effervescent wild ale.

Tasting at Matt's, bottle
Cloudy dark blond colour. Smell of glue, ripe stone fruit (rotting?), acetone. There's some residual sweetness, stone fruit juice, and a lot of acetonee / nail polish.
Bordering unpleasant.

750mL bottle, pours a hazy bright golden orange with a small white head. Aroma is very funky, with a very nice fragrant wild yeast character, lots of oak, and some vinous notes. Flavour is puzzling, with a strange vegetal and chestnut notes… that's gotta be DMS (lots of tinned tomatoes), a bit of wild yeast, a bit of perfume, and pronounced acidity. That DMS isn't very pleasant.

750ml at Matt's amenity room. Appearance: murky golden with a white head. Aroma: acetone, some nice wild notes as well, but with some vegetable notes too. Taste: along the same lines. Overall: harsh, not elegant, good try, probably, but there is still a long way to go.

This has a cloudy sort of lambicy appearance, not dull, but a bit flat-looking. On the palate, it's a bit funny, like acetic, tinned tomatoes, so for me there's things in here I like, but definitely things I do not like. That cooked celery and tomatoes and stuff. Meh.

Cloudy orange-blond colour. The aroma is a bit yeasty, footy, some spirit, very light orange peel. Moderately sour, a bit vinous, funky, but also a bit too yeasty.
Ok beer, but I can taste the randomness.

Taster at St. Augustine's. Pours a bit hazy golden with a white head. Aroma is funky with quite pleasant barrel notes. Taste is similar. Surprisingly good, considering that brewery usually does (or at least used to brew) just ok beers.

Bottle - Light citrus and funk. Clearish light gold with a decent white head. Light soured citrus and some nice fruity notes. Light sourness and nice subtle notes.

Hazy light amber, woody nose but some caramelized stuff like graham crackers. Earthy, just a touch of tartness, and a dash of pale malt sweetness.

Bottle at Farmhouse Fest, pours an opaque bright golden with a small white head. Aroma brings wine barrel notes, some tannins, and light vinegar. Flavour is quite peppery, with lots of tannins, some vinegar and oak. Very peppery, with a vinous, oaky finish. Not very complex or well-rounded. Meh.
