A lacto starter gone awry, a new manoeuvre we call ‘the black sparge’, a fermentation left in the barrel room and forgotten. These are the ingredients that came together to make the beer we call Thaddeus.

A collaboration last fall with our friends at Gladstone Brewing called for a lactobacillus starter, a sour black Saison was to be made. The morning after pitching lacto into 20 ish Litres of wort Scott and Cedric came in to find a vigorous fermentation happening, a sign that wild yeast had gotten in and taken over. Instead of dumping and restarting, Scott put that 20L in the barrel room to see what would happen.

A couple of months later when they revisited that vessel, a strong flavour of stone fruits (think cherries, plums) was detected and Scott and Cedric decided to investigate these flavours. A turbid mash was concocted with a dash of midnight wheat at the end of sparge, as Cedric is so wont to do these days, and into this was pitched our wild -yeast- lacto- starter. A new age version of the Oud Bruin style becomes a classic Townsite brew.

Pours with perfect foam and a deep brown body, the aroma is soft smooth malt and yeasty wood barrels but nothing too intense. Flavour is a muddy mix of malt and yeast, slightly acidic. Mouthfeel is mostly full but also seems a little thin. Still very nice, a very approachable foeder beer that's not too acidic.

500 ml bottle. Pours brown with light head. Aromas of sugar, vinegar, some wood and wet bready malts. Flavors follwo same with more red wine vinegar. Not quite there...

Cloudy light brown. No head. Touch woody, with a light balsamic notes. On the palate, harsh acetic, mellow wood character, ok but definitely rough around the edges...which is why many of these are blended.

Draft - Dark earthy sour notes, touch of umami. Jet dark brown with a small head. Dark tart roast and a light tartness.

Bottle at Farmhouse Fest, pours a deep dark reddish brown with a small beige head. Aroma brings out notes of balsamic, light dark fruits and some woody tannins. Flavour is flat, with light vinegar and woody tannins. Flat and lacking dynamics and depth. Not too impressive.
